The view from the kitchen was humbling yesterday! It was our busiest day since opening the restaurant in April. Bittersweet! Angie and I love serving people well and our staff does too! We are in the service business for a reason...we feel called to serve.
It was one of those days that you hope for! Full house! But you always find your weaknesses when your under the greatest stress. The last hour of the day got tough. We had been in there prepping and cooking for what we anticipated, but that wasn't enough. Most of us up by 5 am on Labor day. We truly have a wonderful staff!
The line and wait got really long...about 45 minutes to an hour. We are humbled for those that waited! And then we started running out of food...uggg. First bacon, then gravy, then casseroles, then biscuits and cornbread. So the people that waited the longest came in to a shorter menu, a tired staff, and less than exceptional meal. For this we apologize! Most of the customers were gracious and understanding. A few ...not so much!
We have learned and hope to live to fight another day! And as I conclude I pray this prayer over our staff, community, and customers. And now may The Lord bless you and keep you, may The Lord make His face to shine upon you and be gracious to you, may The Lord show you His favor and give you peace! Fred and Angie Gretsch
