Last night, we celebrated the grand opening of our mobile kitchen, doing a soft launch event for some family and friends. We couldn't have asked for better weather or better people to celebrate with!

We're doing our first public event this coming weekend, and we already have others lined up, so stay tuned for updates on where and when to find us. We can't wait to serve you some food!

It's official! We passed our health department inspection this week, we are ready to get out there, and almost a year's worth of work has come to fruition. Stay tuned for updates on where and when you can find us.

It's another round of "Clint Cooks Dinner in a Tiny Hotel Room Kitchen!" Every time we go away, we do our best to find a functional kitchen and cook at least one meal. This one was one of the better ones we've encountered, although we did have to ask the front desk for some dish soap! One night we had turkey burgers with bacon and cheddar cheese, and the second night Clint grilled up some strip steak for sandwiches.

As we've said before, we aren't kidding when we say we'll cook in any kitchen. If you want to invite us into yours, what are you waiting for?

Last night, we had the pleasure of cooking for a fun group of ladies celebrating Ali's bachelorette weekend. They started with a cheese and charcuterie board with local cheese and salami, then moved on to a kale Caesar salad with sourdough croutons. After that, the main course was a choice of seared ribeye or roasted chicken, plus mashed cauliflower, herbed jasmine rice, and roasted zucchini. For dessert they had the ultimate summer dessert, strawberry shortcake (not pictured).

The graphics are complete and now another item on the to-do list is checked off. We still have a few more projects to complete but we're getting closer every day to opening. We'd like to send a massive thank you to Next Gen Signs Inc (The Sign Guy) for the fast, friendly, and beautiful work on this baby. As Alyssa Edwards would say, she's back back back again! It's been a long (almost) two months but today we were reunited with our little mobile kitchen. It's everything we could have hoped for and there's nowhere to go but forward from here. Next up, new water tanks, graphics, and a few equipment upgrades. We still have a ton to do but we know it won't be long now before we're ready to go. We can't wait to roll up with this baby and serve you some food!

The second time around, the potato rolls came out even better! Lighter and fluffier inside and more golden brown on the outside. This recipe is a definite keeper and you can expect these rolls in the food truck for sure. We still have a lot to do on that front but we're getting closer to launching every day!

Happy 420! Of course we did some baking today, although we can only show you the one kind. Kira tried out a new recipe for potato rolls, and they came out really well so Clint decided dinner was going to be in sandwich form.
