Funny enough, these brownies actually started as my sweet potato double chocolate muffin recipe 😭🍫
People already loved the muffins, but one day while making them I accidentally doubled the amount of chocolate chips because I looked away halfway through and forgot I had already added them.
I had a full “oh no” moment… right until they came out of the oven.
They were rich, gooey, super chocolatey, and suddenly way more brownie than muffin.
So after that, I started tweaking the recipe on purpose to turn it into an actual brownie instead of a muffin pretending to be one.
Last week’s version still came out a little too cakey for me, but after adjusting the fat and flour ratios, I FINALLY landed on the fudgy texture I was trying to get all along.
What really surprised me though was how fast they disappeared off the shelf.
Usually the double chocolate muffins sell quickly, but these brownies somehow went even faster, which definitely told me I was onto something.
And honestly? Whenever something sells out before I feel like I’ve perfected it, I get weirdly excited because it means I get to go back, tweak the recipe again, and see if I can make it even better.
According to my dad, these officially beat the Ghirardelli triple chocolate brownies now, which is a genuinely dangerous statement in this family.
