Crispy Chicken Caesar Smash Tacos

Ingredients

* 1 lb ground chicken
* 2 cloves garlic, minced
* ¼ cup finely diced onion
* Garlic powder, onion powder, paprika, salt & pepper, to taste
* 1 cup seasoned breadcrumbs
* 6–8 small flour tortillas
* Caesar salad
* Oil, for cooking
* Parmesan, optional

Directions

1. Make the chicken mixture: Mix ground chicken with garlic, onion and seasonings.
2. Smash: Lay a tortilla flat and spread a thin layer of chicken evenly over one side.
3. Bread: Place the tortilla chicken-side-down into seasoned breadcrumbs and press gently so they stick.
4. Cook: Heat a thin layer of oil in a skillet over medium heat. Place tortilla chicken-side-down and cook until the chicken is fully cooked and crispy. Flip and cook the tortilla side until lightly crisp.
5. Fill: Add Caesar salad and Parmesan, if desired.
6. Fold: Fold like a taco and serve hot!

Tip: Keep the chicken layer thin so it cooks evenly and gets nice and crispy.

I bake a lot, so when I say these are the best cookies I’ve ever made, I mean it. 🍓🤍

Breanna requested strawberry cheesecake cookies, so I even cooked fresh strawberries down into a homemade jam before folding them into the dough with cheesecake. They were definitely time-consuming, but worth it.

Nothing beats baking for your baby who’s about to have a baby of her own. ❤️ I even made John and Ricky a bag. ;)
