Did you know that before the mid-1800s, ice was a luxury item in bars? It had to be hand-cut from frozen lakes in the winter and shipped globally. The invention of commercial ice manufacturing completely revolutionized the beverage industry, giving birth to the classic "on the rocks" pour and allowing bartenders to properly chill drinks down "up" in a coupe glass without diluting the spirits.
