Our new Halibut is steamed “En Papillote” with white wine, citrus, and fresh herbs to keep it incredibly tender. We serve it over a warm couscous, topped with a crisp fennel and blood orange salad, and finish it with a tableside pour of tarragon oil and blood orange beurre blanc.
