• Blackened catfish with crayfish Creole cream sauce, Carolina rice & green beans
• Salisbury steak, the Ruby Way, with hand-cut sirloin over a crispy potato cake, caramelized onions, mushrooms, gravy & crispy potato straws
• Chicken fried steak with creamy mashed potatoes & slow-cooked green beans
• Grilled swordfish with green gumbo, tomato gravy & garlic scape oil
