Happy Saturday, y'all!!

First off, THANK YOU for another absolutely INSANE week here at Josef's!! Y'all have been keeping me running around like a T-Rex trying to make a bed with those tiny little arms! 🦖🤣

It's been SO crazy around here that I actually had to CALL IN THE TROOPS!! 🚨

👩‍🍳 **Chef Caitie and K** have been here helping make batters, whipping up macarons, washing dishes, and doing whatever else needs doing!

I KNOW, RIGHT?! I actually let other people help me in the kitchen!! Somebody check the temperature downstairs because something must've frozen over! 😂🤣

Seriously though, I couldn't be more grateful for the help and for all of YOU who keep us so incredibly busy!

🥨 **GOOD MORNING, Y'ALL!! HAPPY PRETZEL THURSDAY!!** 🥨

Soooooo... funny story. 🤣

I may have accidentally made the pretzels a little too big this morning. And by a little, I mean you might need a building permit and a forklift to get one out the door! 😂🥨

But hey, nobody has ever complained that their pretzel was TOO BIG, right?! 🤷‍♂️🤣

Meanwhile, I'm back here running around like a raccoon that just discovered an unlocked dumpster, trying to get **RE-RE-RE-STOCKED!!** 🦝💨 Y'all have been keeping me hopping, baking, decorating, and questioning whether I actually have enough hours in a day! 😂❤️

But don't you worry! We've got cheesecakes, giant soft pretzels, and all sorts of other delicious goodies waiting for you!

Happy Wednesday, y’all! ☀️💙

Yesterday was absolutely INSANE — and I mean that in the best possible way! 😂 Thank y’all SO MUCH for keeping us running, baking, decorating, packaging, restocking…and apparently testing exactly how many desserts one guy can make before he starts seeing cheesecake in his sleep. 🤣

You cleaned me out so hard yesterday that I’ve used every container I have to get what we’ve got into the display cases this morning! 😂 Our delivery truck is coming today with more, so I’ll keep filling things up as fast as I can.

And the Creepy Babies… 👶😳

Y’all bought HUNDREDS of them yesterday. Every time I got some into the case — GONE. I finally thought I was starting to get ahead…and then someone came in and BOUGHT EVERY SINGLE ONE I HAD. 😂

So, before anymore of y'all comes charging through the door looking for their creepy little bundle of cheesecake joy: I am OUT of Creepy Babies today! They’ll be back, but it’ll be a few days. I have a HUGE special order of them for tomorrow, which means every mold I have is spoken for.

And these little monsters aren’t exactly a quick dessert to make! Each one gets:

Cheesecake batter made from scratch → filled into the molds → baked → cooled → frozen → unmolded → dipped in chocolate → put BACK into the molds → frozen AGAIN → unmolded AGAIN → hand-shaped → and finally hand-painted one at a time to make them wonderfully creepy. 👶😂

And yep…I do every one of those steps myself, right alongside making all the cheesecakes, cookies, macarons, pastries, cannolis, cream puffs and all the other goodies y’all keep devouring!

So bear with me — Mr. Cheesecake Man only has two hands! 😂

We’re OPEN TODAY 10AM–6PM, and the cases are loaded with what containers I could scrounge up until that truck gets here!

Good morning, friends! ☀️

How was y’all’s long weekend?! Ours was nice and relaxing… 😂 Okay, that’s a lie.

We watched the Brewers dominate, of course ⚾, and then Caitie had her friend’s birthday party, so we hosted what felt like approximately ONE MILLION teenage girls. 😂 Somehow the house is still standing!

We’ve also had quite a few people ask lately if the pictures we post of our cheesecakes are AI generated. Nope! 😂 These are real cheesecakes, made right here at Josef’s by real people—usually me running around the kitchen like a crazy person.

So I figured I’d show y’all a little behind the scenes! We have our little photo light box and plates that we use to make the cheesecakes look pretty for their glamour shots 📸… and then you can see the not-so-glamorous reality: tables full of cheesecakes getting packaged up for y’all.

No fake cheesecakes. No imaginary desserts. No computer-generated bakery magic. 😂 We really do make ALL this stuff right here at Josef’s—and yes, the Creepy Babies are unfortunately very real. 👶😳😂

A huge THANK YOU to everyone who was lined up at the door this morning and to all of y’all who have been coming in nonstop ever since. You sure know how to keep us moving around here! 😂

And a big CONGRATULATIONS to all of our brides and grooms today! 💍❤️ I’m out running around delivering wedding orders right now, and as soon as I get back I’ll be diving right back into the kitchen to put together even MORE cheesecakes for y’all.

A rich **chocolate cheesecake with gluten-free Oreo cookies**, dipped in white chocolate and perched on a mound of **gluten-free Oreo “dirt”** with colorful, squirmy gummy worms crawling around underneath. 🪱🍫

Good morning, friends! 🥨💚 It is a wonderful **Pretzel Thursday** here at Josef’s!

Every Thursday we’ve got our **jumbo soft pretzels** served up with cheese and mustard, and they are looking pretty hard to resist today. 😋

Our product delivery truck decided to make things interesting this morning and showed up about **2 hours late**, so I’m still baking, decorating, and getting everything out as fast as it comes from the ovens. Don’t worry though — the goodies are rolling out!

And y’all have GOT to check out our **Poison Apple Cheesecake** today. 🍏☠️ A green apple cheesecake dipped in black chocolate with mixed berries oozing underneath. It looks a little wicked… but tastes dangerously good. 😂

We’re open **10am–6pm today**, so come grab a pretzel, some cheesecake, and whatever else happens to jump into your box.

Good morning y’all! ☀️🍰

Well... y’all have officially done it again 😂

For the last month, every single day has been an absolute whirlwind here at Josef’s. We have been so blessed by the amazing support that we actually ran out of cream cheese, flour, yeast, and a whole bunch of other supplies before we could even get the next truck in!

Now, I usually keep enough inventory on hand to make a couple thousand cheesecakes a day plus enough extra supplies for another 200–300 cheesecakes, because we bake fresh every single day...

But y’all have been blowing through all of that every day for the past month! 🤯

Don’t worry though — we are restocked, the ovens are fired up, and we have plenty of cheesecakes and all your other favorite goodies ready for y’all today!

And guess what... we even have CHEESECAKE TACOS making their way into the display again! 🌮🍰 (Don’t worry, these are the kind of tacos that make your sweet tooth happy 😉)

Also, last night we got to take a little time away and celebrate a very special milestone — Caitie’s birthday and her passing her driver’s license test! 🎉🚗

While we were out having dinner, we ran into so many of y’all, and we just want to say thank you. The love, encouragement, and support you show us — even when we’re just out being a family — means more than y’all know.

We are truly blessed to have the best customers around. ❤️

Happy Tuesday friends! How was your weekend? Of course it was homecoming so Caitie and her friends went to that and then spent the night at our house, thank you to Todd Condon Photography for taking the girls photos, We had family birthday parties for Caitie and Becca, then Nana said she heard snow might be coming soon so I had to put the plow back on the truck and do all the maintenance things on the truck. Then after school yesterday I took Becca out to get her sister birthday presents for Caitie whose birthday is today. Becca wanted to get exactly 3 things. I dunno why but she had to get 3.. and then I spent the rest of the weekend either baking here for today or putting together all Beccas presents sent from family.. we are open 10am-6pm today swing in and wish me luck as Caitie is headed out shortly to attempt to get her drivers license on her birthday.

It’s another beautiful day here at Josef’s, and it’s another BUSY one! We have weddings stretching all the way from Mondovi to New Auburn today and everywhere in between, plus baby showers, birthdays, and a whole bunch of other special orders going out the door. ❤️

And because y’all did it again… we sold out last night!! 🙌 So that means today is another day of fresh, brand-new cheesecakes coming out of the kitchen.
