We wanted to see how far we could push the natural sweetness of peak-season corn without losing its comforting familiarity.
Instead of leaning into heavy, warm flavors, we took it in a sharper, colder direction.
The tension between the sharp Tropea onions, acidic crème fraîche, and bright apricot actually forces the corn to taste more like itself. It’s a study in balance dressed up as a simple plate.
