At Manchamanteles, our cooking begins with the fire.

Our Aztec Grill draws from the open-fire cooking traditions of Mesoamerica, where wood, heat, and time have long been essential to the way food is prepared.

We cook over mesquite wood, allowing the fire to shape the flavor of each ingredient — creating the char, smoke, and depth that define our cocina de humo.

It is a tradition we continue through our own kitchen in Bucktown, using the grill as both a cooking method and a connection to Mexico’s culinary history.

For Día de los Mu***os, Chef Geno Bahena presents El Monarca, a four-course tasting inspired by the journey of the monarch butterfly — a symbol of memory, migration, family, and the traditions that connect generations.
Each course follows a chapter of that journey, from the first offering to the path between two worlds, culminating in a final expression of remembrance and celebration.

We’re proud to be named one of Chicago’s Best Mexican Restaurants by Brenda Storch. Thank you, Brenda, for including Manchamanteles in your list and for recognizing what we’re building in Bucktown.

At Manchamanteles, Mexican cuisine is rooted in memory, fire, tradition, and the incredible diversity of Mexico. Our kitchen brings those ideas to the table through handmade corn tortillas, chiles, mesquite and oak, and our collection of moles — each one with its own history, character, and place in Mexican cooking.

Our first year at Green City Market , and what a beautiful one it was.

Thank you, Green City Market, for having us — and thank you to everyone who came out to support Manchamanteles at the Chef BBQ. From longtime guests who stopped by to say hello to the new faces we met for the first time, we are grateful for every conversation, every plate, and every bit of support for our Chicago kitchen.

For the Chef BBQ, we brought one of our favorite expressions of Mexican cuisine: our Mole Blanco Xanath Mushroom Tostadita, made with River Valley Ranch & Kitchens , La Cosecha | Tortilleria & Grocer | Madison, WI tostadas, and Chef Geno Bahena’s house-made Mole Blanco Xanath.

A Night at Green City Market

Last night, we had the pleasure of being part of Green City Market’s Chef BBQ in Lincoln Park, an evening celebrating Chicago’s farmers, chefs, and the community that brings food to life.

It was especially meaningful to meet so many new guests and introduce them to Manchamanteles, while also seeing familiar faces and returning guests who have shared a table with us in Bucktown. Your continued support means so much to our team.

For the evening, Chef Geno prepared our Mole Blanco Xanath Mushroom Tostada — house-made Mole Blanco Xanath with local mushrooms from River Valley Ranch & Kitchens, chile pasilla, and a crisp tostada from La Cosecha | Tortilleria & Grocer | Madison, WI Cosecha Tortillas.

We’re bringing this dish to Manchamanteles for a limited time.

Available until our Mole Blanco Xanath sells out.
