Meet Zack Dean Blazek, partner and Director of Operations at Clumsy Cow BBQ and Industry Ales Brewpub! Zack hails from the suburbs of Chicago where his career in the hospitality industry began. His passion for fine dining blossomed during his time at Japonais, an upscale fusion restaurant in Chicago before signing on with Virgin Hotels where he spent nine years and ascended to Director of Food & Beverage. All our signature sauces are made in house and feature our take on classics like Carolina gold, broad shoulder buffalo and our signature vegan BBQ sauce (which also comes vegan;) For more adventurous eaters, dip into our special lemon pepper mild, Schezuan hot and/or citra hopped tangy BBQ options.
