At Tacotlán, we never want to be boring.

We’re always thinking of new ways to take something familiar and make it more fun, creative, and unexpected. That’s how our shaped tortas became a thing, and the pumpkin torta is just the latest idea to come out of that.

We love being innovative, trying new things, and keeping people excited about what we’ll come up with next.

I swear I crack myself up. 😂 I love meeting people, so I’m always saying YES to everything… and then suddenly I’m in a chef’s apron like, “Okay, I guess we’re doing this.” 😭😂

Today’s meeting really rejuvenated me. Being in a room with other chambers, sharing ideas, learning from each other, and talking about how we can bring more resources back to our communities reminded me why this work matters so much.

There is so much power in collaboration. The more we connect, the more we learn, and the more we can help our businesses grow.

At the end of the day, it’s about making sure our people have access to the resources, relationships, and opportunities they need to build successful businesses. Grateful for days like today that get me excited all over again.

Earlier this year, I had the honor of speaking at the Illinois Restaurant Association Educational Foundation Scholarship Awards Luncheon. Somehow, that speech led to an invitation from Kendall College at NLU National Louis University to come do a cafeteria takeover. 🥹❤️

No, I was NOT giving up the birria recipe 😂 so I brought something simple, delicious and close to my heart: our quesadilla frita, inspired by memories of our mom.

And I may have told their enrollment team that I’m the Kim Kardashian of my family… so naturally, I have to keep leveling up. 😂 Maybe a class at Kendall is next?!!
