These snapshots from 2004 mark Chef D's very first visit to Da Delfina, a rustic, family-run haven tucked into the Tuscan hills just outside Florence. From curing their own meats to making their own balsamic, they pour tradition into everything they do.
"They cook seasonally, and they cook wonderful rustic Tuscan food. They just do so many things as a family that make that restaurant special. The things that I ate there are super simplistic, but it’s all about that seasonality aspect and 'no fuss.' It is good ingredients really done well, respected in how they're prepared, and the end result is something really enjoyable."
