I always make sure to pass them on to my mom who taught me all the secrets of good tamale making. As hard as it is was to learn from a Hispanic mom who says things like:

Kneed the masa until it SOUNDS right
Boil the chilies until they SMELL like they’re ready
Spread the masa on the CORRECT side of the husk (there is apparently in fact an incorrect side 🤣)

Thank you to the lovely people who saved the day today. I had two large orders (you know who you are 👀) no show. All the prep work, time away from my babies and money on ingredients would have been lost if it weren’t for good people out there who bought the tamales. What a day!
