A common coffee question is, "What does the roast level tell me?" Let the Giant explain. ☝️
As coffee beans are heated, the chemicals inside them undergo significant changes. As sugars and amino acids break down, a once-greenish bean turns yellow and then brown. How dark the bean becomes depends on roasting time and temperature.
We heat our beans until they crack, kind of like popcorn. Throughout the process, we monitor the beans—making sure they stay at just the right temperature.
Lighter roasts are heated for less time and to lower temperatures. This allows them to maintain more of their "origin" flavor—the specific characteristics a bean gains from growing in a particular region.
Single origin coffees are often roasted lighter as roasters chase specific, distinct flavors. In lighter roasts, you’ll often find floral or fruity notes.
Darker roasts, on the other hand, are heated longer and to higher temperatures—up until a second crack occurs, and sometime well beyond that. This longer roasting process further breaks down the sugars and brings more oils to the surface of the bean.
Dark roasts often lack the more delicate flavors found in their lighter counterparts. Instead, they take on a thicker, bolder flavor.

For many of us, coffee is a ritual. The experience of grinding the beans, heating the water, and pouring the resulting brew into our favorite cup grounds us in the present moment while preparing us for the day ahead. It's special time we take for ourselves each day.
Of course, people drink coffee for different reasons—and prepare it in different ways. Some folks keep pre-ground beans beside their drip maker, turning it on just in time to make their morning commute. Some sip from a thermos whenever they get the chance between kids, work, and home life. And some people (gasp!) don't even drink coffee every day—just having a cup or two at brunch on the weekends.
We like a little ritual with our coffee, but that doesn't mean you have to. Whenever you drink your coffee is the right time. Wherever you drink it is the right place. And however you drink it is the right way.
We understand that each coffee drinker is different, so we've made sure to roast something for everyone.
