Good morning and welcome to September 1st!!!

Chewy and nutty farro is the base for Insalata di farro with roasted summer vegetables. Eggplant, yellow squash and zucchini are roasted along with onions and tomatoes are tossed with fresh herbs and crumbled parmigiano makes for a satisfying lunch or as a side dish. Lasagne gets a makeover. We are layering Via Ravioli pasta sheets with a cherry tomato sauce, ricotta, basil pesto, mozzarella and grated parmigiano and pecorino. Tomatoey, cheesy and delicious! The balance of the menu is unchanged.

As always, jams and marmalades from Mimi Beaven are available. These jams are small batch and of local ingredient and the quantities are limited. Start the day with jam and toast, but don’t limit them to breakfast. The jams will perk up any sandwich, accompany roasted and grilled meats, are yummy with cheese and how about topping vanilla ice cream with black currant jam or very red berry!! Good Morning!!!

Hoping you all are enjoying this lovely Hudson Valley August. Our soup this week is Corn and Potato Chowder. A nice soup chocked full of creamy Elfe potatoes, sweet corn and smokey bacon, just right for these cooler evenings. New salad this week is a bounty of vegetables from some of our favorite growers, namely Blue Star Farm, MX Morning Star and Staron’s. A sampling of vegetables of the moment, both raw and cooked, dressed with an herby vinaigrette on a bed of panisse lettuce makes for a light meal or along side our roast chicken or first course to Via Ravioli. The tomato sandwich this week, fresh mozzarella, tomatoes and basil, a summer classic, were meant to be together! Lastly for something sweet, nectarine and blueberry crumble is yummy!

Our favorite, Insalata di riso the classic italian summer salad is back. Tender rice with fresh and pickled vegetables along with salami and provolone make for a great lunch. Good Morning!!!

Only a couple of changes for this week. Our favorite, Insalata di riso the classic italian summer salad is back. Tender rice with fresh and pickled vegetables along with salami and provolone make for a great lunch on its own of with our roast chicken and gazpacho for a light summer meal. Soup is tomato and cantaloupe gazpacho, bright, zippy and refreshing, a must for your summer eating bucket list! We are roasting turkey breast and baking focaccia for our sandwich this week.. Blue Star farm tomatoes, basil aioli, sharp cheddar, pickled onions and arugula all come together for a yummy bite. The tomato and goat cheese sandwich continues. Tomato quiche is peek summer. Thick sliced tomato is layered with caramelized onions, fresh thyme, gruyère and parmigiano, perfect at room temperate and absolutely the best picnic food. The tomato and melon salad gets a tweak with the addition of charred corn joining cucumber, red onion and feta, lots of herbs and lime vinaigrette. Thumbprint cookies are with seame seeds and filled with homemade sour cherry jam. Galette is blueberry and the scone has fresh peach.

Four minutes in boiling water, drain and dress with simple melted butter and parmigiano, and a handful of fresh herbs, or a simple sauce of fresh tomatoes. Here are the menu updates for this week. Tomato quiche is peek summer. Thick sliced tomato is layered with caramelized onions, fresh thyme, gruyère and parmigiano, perfect at room temperate and absolutely the best picnic food. Ratatouille, would also be happy on a picnic. A summer classic, chocked full of silky eggplant, zucchini, summer squash, onions, garlic and lots of basil. You don’t aways consider summer soup season , but why not with all of the perfect vegetables just wanting to be used. This week’s soup is bright and brothy with fresh dill, sweet young cauliflower, baby limas, zucchini, green beans, swiss chard and tomatoes. Good Morning!!!

In an effort to bring you as much summer goodness as possible, we are doing a luscious Ratatouille, a classic, chocked full of silky eggplant, zucchini, summer squash, onions, garlic and lots of basil. A perfect accompaniment along with Insalata di Fagiolini to our roast chicken. A simple easy meal that you can enjoy more than once. Summer vegetable soup returns, loaded with all of the vegetables of the moment and toped off with a plop of pesto misto, a pesto of a variety of summer herbs. This pesto is nut free. We are grilling Yundwell chicken thighs in a Vietnamese style lemon grass marinade for our take on a Bahn Mi sandwich, loaded with pickled vegetables and lots of herbs. The first tomato sandwich of the season is with creamy fresh goat cheese, zippy olive tapenade and fragrant sweet basil on baguette. And continuing, a salad of sweet orange-dew melon, local tomatoes, cucumber, red onion and feta come together with, basil, mint and chives, aleppo pepper and a zippy lime vinaigrette. Good Morning!!!

The menu is pretty much the same this week. We do have a full on summer vegetable soup, loaded with all of the vegetables of the moment and toped off with a plop of pesto misto, a pesto of a variety of summer herbs. This pesto is nut free. The first tomato sandwich of the season is with creamy fresh goat cheese, zippy olive tapenade and fragrant sweet basil on baguette. Taking a break from the Insalata di patate and giving you beautiful salad of green and yellow beans with cherry tomatoes, shallots, basil, red wine vin & evoo.

Continuing from last week, Sweet orange-dew melon, local tomatoes, cucumber, red onion and feta come together with, basil, mint and chives, aleppo pepper and a zippy lime vinaigrette. We are baking individual peach galettes. Lasagne features sautéed zucchini, lots of basil, tomato sauce, fresh mozzarella, parmigiana and pecorino. We’ve added another salad this week. Sweet roasted beets, carrots and shallots are dressed with a cumin-coriander and pomegranate vinaigrette, pistachios and dill. We are doing a ham sandwich with Kinderhook Farm ham, peaches, pickled onions, arugula and paprika butter on baguette.

Corn has arrived!! Our vegetable quiche is loaded with sweet Samasott Farm corn, scallions, basil and sharp cheddar. In addition to Gazpacho, we are doing corn soup, influenced by a summer favorite, succotash. Corn, zucchini, baby limas, sweet bell peppers all come together in a beautiful bowl that can only happen this time of the year. Lasagne features sautéed zucchini, lots of basil, tomato sauce, fresh mozzarella, parmigiana and pecorino. We’ve added another salad this week. Sweet roasted beets, carrots and shallots are dressed with a cumin-coriander and pomegranate vinaigrette, pistachios and dill. Good Morning Chatham!

No changes to the menu this week. Here is a recap. Gazpacho is back and will be around for awhile. It is the essence of summer! Zucchini and yellow summer squash are stars of this week’s salad, joining tender farro, chickpeas, sweet red roasted peppers with parmigiano and olives over mixed lettuces and tossed with an herby vinaigrette. Quiche is filled with tender, sweet zucchini, basil and creamy goat cheese. This week’s lasagne features tomato sauce studded with zucchini, sweet carrots and peas along with fresh basil, ricotta, mozzarella, parmigiano and pecorino. We are roasting chicken, tossing it with its own jus, piling it on a baguette with butter lettuce and cornichon with a swipe of mayonnaise. The vegetable sandwich is roasted beets, smashed cucumber, pickled onion, olives, lots of herbs and garlic-scape goat cheese on ciabatta.

Keeping a stash of Via Ravioli in the freezer is always a good idea for a quick and delicious meal.
