You spend weeks planning an event for people you love, only to spend the actual event making sure everyone else is having a good time.

Are the drinks full?
Is the food ready?
Did someone eat?
Why is the oven doing that?

After years in professional kitchens and now serving clients in their homes, one thing has never changed.

I genuinely enjoy watching people enjoy good food.

Not because they tell me it tastes great.
Because I get to see families laughing around the table.
Friends catching up.
Couples celebrating milestones.

Food has always been about connection.

Most guests notice the finished plate.
Chefs notice everything else.

The pan that was just the right temperature.
The sauce reduced a little longer.
The herbs picked at the last minute.
The seasoning adjusted after one final taste.
The plate wiped clean before it ever reaches the table.

Hundreds of small decisions happen during every dinner service.

People usually assume my favorite moment is serving the entrée.
It's actually much earlier than that.

It's when I hear the conversations begin to slow down.
Guests stop talking for just a few seconds because everyone is taking that first bite. Then someone smiles. Someone else starts asking questions about the dish
The conversations pick right back up.

Those little moments tell me I've done my job.
Food has an incredible way of bringing people together.

He's thinking about balance.

If one course is rich, the next might be lighter.
If there's something creamy, He'll often introduce acidity in the following course.
Different textures. Different temperatures. Different colors.
