At YUME, we choose Faroe Islands salmon for its ideal balance of fat, clean flavor, and firm texture. These salmon are typically larger, giving us those beautiful, generous cuts you see on our sashimi plates.

We carefully cure our salmon before it ever reaches your plate — bringing out its natural sweetness while creating that fresh, buttery flavor with a slight, satisfying firmness in every bite.
