Need a healthy snack that is high in protein and fiber?
INGREDIENTS:
1 cup of protein powder of your choice
1 cup of mixed nuts of your choice *optional*
1 cup organic shredded coconut
1 pkg of organic pitted medioal dated
1/2 pkg of organic Turkish apricots
1/2 cup of nut butter (I like organic almond butter)
1/2 cup of organic tahini
1/2 cup of chocolate chips *optional*
1/2 cup organic h**p hearts
1/2 cup organic flaxseeds
1/2 cup organic chia seeds
1/4 cup of organic cacao nibs
4 tbsp organic cocoa
2 tbsp organic cinnamon
1/4 cup of water
INSTRUCTIONS:
-In a large mixing bowl, add all dry ingredients except nuts.
-In a food processor or blender, chop nuts then add to the large bowl.
-Next place dates, apricots, and water to food processor or blend. Blend until mixture is a paste consistency. You may need to add a little more water.
-Add mixture to the large bowl.
-Lastly add the nut butter and tahini.
-Mix all ingredients until well mixed. If mixture is too dry, you may need to add more water, small amounts at a time, as the mixture should be gooey.
-Roll in desired size balls and refrigerate.
