My first brisket in about two years. Been a crazy few years with being an American Legion commander, Dad, Paymaster for the Marine Corps League, and a full time job. I don’t post enough lately, but I’ll try and do better about that.

Point on the brisket was fantastic, flat wasn’t as good as I want it to be , but not bad for the first brisket in a while. I waited for the bark to form this time, which I’ve been hesitant about for a while. But I liked it.

Stalled at 145 for a while.

Also, at 5am, my thermometer decided it didn’t want to connect to the receiver anymore. 🤣🤦🏼‍♂️ early morning run to Lowe’s for a temporary solution got me through 🤣🤣

So, this was probably the coolest day I’ve had smoking . I entered my FIRST BBQ competition at a couple of months ago, and I had some friends try some experimental choices I made a couple of weeks ago.

Well, turns out, the majority won as I got first place in pork at the First Annual Smoke Your Butts Off competition TODAY that Neoteric put on.

It was truly a family affair, as we used grandads pork sauce as the thing that set us apart. Spoiler, it was a success. Finlay helped me prep the butts, then he helped do a couple of mopping sessions. Jenny monitored the meat while I finished up on the tree house build for a bit too.

Well, I won First Place pork! I’m still in shock! 🤣🤣

Big thank you to Nick and Vic who came out and supported and brought some friends too!

Lost close to 7lbs of body weight in 72 hours from some illness keeping my internal temp at 103*, that is neither strep/vid/flu, so I need to gain some of that poundage back. No better way than some good beer and tasty wings.

Got a chance to participate in a chili cookoff at the local American legion . This was put on by the Auxiliary and all proceeds went directly to the VA in Salisbury! While I did not win, it was a great time and my small edits to my recipe went over very well. I added a lbs of beef short rib! Usually it’s two lbs of ground beef but I added some short rib in there to added some flavor bombs. Definitely keeping that in the recipe.

What a way to end the summer. My neighbor asked me to cook for his big party to mark the opening of his finished loft bar, Engineers and Esquires. What an epic party. To be able to see the garage they have spent years perfecting, enjoyed by so many people, was truly magnificent to see. We pulled off 50 lbs of pork butt, countless burgers, hotdogs, sausage, elk, just an amazing selection of meats to cook. Upwards of 50 people showed up to welcome the new place, and everything was a success!

Congrats Chris and Kate on a amazing garage/bar!
