🏴 St David’s Day Toast (Welsh-Inspired Rarebit Dream)
A toast fit for March 1st, where the humble leek puts on a crown and cheese melts like a golden sunset over the valleys of Wales. This is a playful twist on classic Welsh rarebit, rich, savory, and just a little bit regal.
🧀 Ingredients (Serves 2–4)
4 thick slices rustic bread (sourdough or farmhouse loaf)
2 tbsp butter
1 medium leek (washed and finely sliced)
1 tbsp flour
1/2 cup ale or milk (ale = deeper flavor)
1 tsp mustard (Dijon or English)
1 tsp Worcestershire sauce
1 1/2 cups sharp cheddar cheese (preferably Welsh cheddar)
Salt & black pepper to taste
Optional: pinch of smoked paprika
Optional garnish: chopped chives or parsley
🔥 Instructions
1. Toast the base
Lightly toast your bread until just crisp. Set aside like a stage waiting for its star performer.
2. Sauté the leek
In a pan, melt butter over medium heat. Add sliced leek and cook gently until soft and fragrant (about 5 minutes). No browning—think soft, silky, and mellow.
3. Build the sauce
Sprinkle flour over the leeks and stir for 1 minute. Slowly pour in ale or milk, stirring constantly until thickened into a smooth sauce.
4. Flavor magic
Add mustard, Worcestershire sauce, paprika (if using), salt, and pepper. Stir well.
5. Melt the cheese
Lower heat and stir in cheese until melted into a rich, velvety mixture. It should look like edible gold.
6. Assemble & grill
Spoon generously over the toast slices. Place under a broiler (or grill) for 2–4 minutes until bubbling and slightly browned.
7. Finish & serve
Sprinkle herbs on top and serve hot.
