Pansotti are dear to me bc like me, their identity is all bout the chub. Translated as "pot belly" these are stuffed with ricotta, daylily shoots, perpetual spinach and a pinch of nutmeg. A little lemon zest, butter and parm make these chubby pillows an early summer treat. Made these for last night and definitely think they sing a little louder.

As is the case in Chapel Hill, post graduation tumbleweeds are rolling so were rolling out some of 's favorites to entice her (and all the other 12 year olds from OBX) to join us. Gnocchi with rabbit carnitas and browned butter & preserved lemon not on menu until next week.

Let's finish out this amazing week with a little love for our ever changing, gypsy traveling menu. One of my favorite gnarly comfort dishes with some Bombolo polish (or tarnish depending on the idiom). Congratulations to all the graduates!
