It’s time to eat cheese by the wedge.
Normalizing eating cheese by the wedge. It doesn’t have to go on a board, just in your mouth like your favorite snack. 😉🧀

This is Los Cameros. You’ve seen videos of me cutting into the wheel. It’s been part of our collab with Fougasse over the summer, and today it’s our focus cheese.

Mix milk cheese (cow, goat, sheep) from the Rioja region of Spain. A family run creamery, this cheese is a love language by the cheese maker. During the aging process, the cheese is hand rubbed with olive oil to create this beautiful rind.
Featured in our case for 7 years now, this is the cheese that outshines Manchego (🤫), but don’t tell Manchego I said that bc that post will be next.

Couldn’t wait till next Wednesday to share this with you.
This is Shropshire.
It’s a Gorgeous blue and despite the name, it did not originate in Shropshire. It was created in Scotland by Andy Williamson who was trained in Stilton production.

This blur has notes of minerality, buttery, earthy, creamy, and tangilicious.

If you’re a self described romantic, an Anthony Bourdain fan, then you need to run to your nearest cheese shop and live life!

🧀Emmentaler-the Original Swiss Cheese
Those icons eyes (the cheese’s, not mine) aren’t just for looks. Emmentaler comes from Switzerland and has been made there for centuries.
🐄’s milk cheese, smooth, nutty, kinda sweet, kinda savory.
Perfect snacking cheese and ALSO the best melting cheese for grilled cheeses and fondue.
