Woah.

This is a lot.

I'm not the emotional type. I'm the grumpy type. Therefore, this is weird for me. Welp, here goes…

Anyone that knows me has seen my “Oh, you can go straight to hell” look. I'm pretty good at it. It's not on purpose. It just happens. It's so weird, because if you've ever met my parents, they're such beautiful and kind people! I dunno. I'm old and jaded, I guess.

However, to say that I have an emotional attachment to this stupid building is akin to saying that chicken wings love bleu cheese 👉kingofthewingmn.com👈
That was shameless….. Elm Creek Brewing 🍺 was cool with it though.

My brother James started this place in 2005. I was working for his other joint in Uptown, 🍸 The Independent. Some of y'all were regulars of mine there, before Mav’s. Then I came to Maverick's in 2007. I was a punk ass in the ‘burbs, and y'all accepted me. I also had another punk with me, Ryan Peterson. That made it a bit easier, having another dirtball around.

I can't begin to explain how awesome this run has been. The friends, the fun, the memories. That goes without saying. However, I’d like to explain why I've been in this building for as long as I have -

IN THIS BUILDING: I ate beer cheese soup with popcorn on top since 1983 (The Landing)

IN THIS BUILDING: I've jammed on guitar with some really cool cats (Jason Bradley, Michael Campbell, Bruce Gutknecht, and lots more…)

IN THIS BUILDING: I played Magic The Gathering until 5am on Wednesdays for like 2 years, drinking beers and smoking w**d (Sorry owners)

IN THIS BUILDING: I've maybe dated a cocktail server(s)… or married one… (Love you, Liz 💍❤️)

IN THIS BUILDING: I've helped develop (alongside Ryan, and the rest of our awesome staff) a culture of acceptance and equality in the community 🌈 where anyone is welcomed and encouraged to be themselves

And lastly, I've stuck around this crazy building for so long because we have the most incredible staff that any fella, any manager, any coworker could EVER ask for. Loyal, hard-working, funny, weird and amazing. Ryan and I owe everything to them.

So this is not just a building after all. This is a community. A family.

And guess what? That's not ending. That's following us. That comes with me and Ryan to Elm Creek Brewing with King of the Wing.

It’s not you it’s me….. And I know people say that all the time and it really means that’s it’s you but this time it really is me. On Saturday after we close I will have been an employee in every single payroll Maverick’s has ever done. To say I love Maverick’s would probably be a bit of an understatement, Maverick’s is everything I dreamed a bar could be, a real life Cheer’s. A place where you show up as you are, a place where no matter your history as long as your heart is in the right place you’ll be accepted as part of the family. I’ve met some of the most amazing people in this restaurant and made friendships that will last forever.

Leaving Maverick’s was one of the hardest decisions I’ve ever made for so many reasons.

The hardest for sure is the Maverick’s staff, as you all know we have greatest restaurant staff ever assembled and I’ll go to war over that. Part of the reason it’s hard to leave is most the staff has been here at minimum a year and some have been here for 11+ years. All of these folks that work at Maverick’s are the glue that holds it together. I’ll miss you guys the most, sometimes we argue and bicker but I couldn’t ask for a better group of people to spend my weeks and in most cases years, and in a lot cases decades with. I also don’t want to leave out the people who have worked at Mavs and gone on to do great things for themselves! I’m so happy to see all of you succeed, and I’m so excited to watch all of you flourish, if you guys ever need anything always give me a call.

Next up, all of you…. I couldn’t have asked for a better group of test subjects. I understand that trust is earned but man I couldn’t have ever expected the trust that you people have put in me. Firstly the food, you folks are willing to try anything, well.. almost anything. The Korean corned beef and cabbage with spam fried rice was a pretty big flop. (It was better than you gave it credit for) From oxtail, crayfish, dirty rice, atomic wings that will blow your face clean off you guys literally ate it up! I can’t thank you enough for the support and feedback that you’ve all given me truly from the bottom of my heart THANK YOU!! The support and love that you all gave me through the best of times as well as the worst of times was unwavering. The amount of meals that were dropped off at my house while my Mom was sick was insane. Can you believe the stone’s on these people? Dropping off meals for someone who cooks for a living? Every one of you was so supportive during the hardest point in my entire life and for that I also can’t thank you enough!

Thank you guys so much for taking a chance on me! I couldn’t have asked for a better two people to have as my bosses for this long. It’s been an absolute pleasure working for you two, no matter what once in a lifetime world event hit us you guys were always right there and generally behind my ideas of finding the best way forward for Maverick’s. I’m so glad to have both of you in my life and I know that at any point in while running the new business I can call you for advice! Thank you so much for allowing me to run Maverick’s over the last 18 years it's been an absolute pleasure!

So what's next?

First of all Party!

Today will be our last regular dinner service, as a restaurant that won’t be open as of next week we’ve ordered light and are going to try to run out of everything. As we’re not sure what we’ll have left by morning our plan as of now is to do a small buffet of some things we have left until we eventually have no food. We kindly ask you to be polite to our servers as they tell you, “Sorry we’re out of that.” it’s not an ideal situation for them either.

As most have heard Dan and I are starting a restaurant inside of Elm Creek Brewing Co. It'll be called King of the Wing and I'm so dang excited for you all to come check it out when we're up an running. Over the last four years my passion for creating the best chicken wings around has become more of an addiction and I can't wait to show you some of the new flavors we've been working on. We'll also have smashburgers, vegan smashburgers, tenders, fried cauliflower, zucc fries and once we're in and settle I promise to bring some of your Mavs favorites to the brewery. We’re so excited for what’s to come and we hope to get the same support you’ve all given us at Mavs!

Again from the bottom of my heart thank you all so much for your friendship and support and I can’t wait to see you all this weekend and in the near future at the brewery!

Hello all!! We can’t say how grateful we are that you’re all coming to see us before we close on the 31st, however we’re out of food, like seriously we’re out of fries, wontons, burger buns, almost out of wings. We were hoping the trucks would get here a little early today so we had some time to get ready and open up on time today but it just didn’t happen! So we’re going to take the next couple hours to get as much of the menu prepped up before we open at hopefully 2:30! See you all then!

18 years old. An adult. Old enough to vote and move out on your own. It’s an eternity in the restaurant industry. To put into perspective how long ago that was, we had serious debates about opening a restaurant after the smoking ban went into place, wondering “are people still going to go to bars if they can’t smoke inside?”.

From the smoking ban, to financial meltdown, to global pandemic, we’ve been here through it all. We wouldn’t have been able to do that without each and every one of you. Without our fiercely loyal Maverick’s family - you - there’s no way we would be still alive. We can’t say enough how grateful we have been for all of your support and love that you’ve given us over the past 18 years. But as the story goes, all good things must come to an end.

Saturday, May 31st will be the last day Maverick’s Wood Grill will be open, at least in its current form. A sappy person would say don’t cry because it’s over, smile because it happened. We’re pretty sure that this is one of the cases where we’ll do both.

Ryan and Dan have an opportunity to start their own business, and we’re very excited for them to begin their own journey as restaurant owners at a new concept. They’ll be able to tell you all about it.

Years ago, a bartender at another local establishment called Maverick’s “the land of misfit toys,” and to be honest - it might have been the greatest compliment anyone has ever given us. A place where people are not only accepted, but encouraged to come as they are.

To our incredible staff over the years - you came in as strangers and left as family. And not that BS kind of family where the boss says “we’re like a family here.” We’re forever grateful for the friendships we’ve made along the way, and the good times we’ve had with you all will never be forgotten.

So Champlin - you’ve got us until the end of the month to come in and share your favorite times at Maverick’s! Whether it be beer and wine dinners, trivia, live music (sometimes featuring our own Dan), impromptu dance parties, holiday brunches, or choir practice, we’d love to hear about all of them. We’re additionally planning a special closing party on Saturday, May 31st and we want to see EVERYONE there.

As for the future of what Maverick’s becomes, Amber and Chase are currently exploring options. We will be looking for new owners. So, if your uncle recently won the lottery, and has always wanted to open a restaurant, please reach out to [email protected].

Again, thank you all SO MUCH for the 15 good years (let’s be honest, 3 or so of them were not so good), and let’s make some new memories in this last month.
