Well, it almost happened. This cake was almost thrown out of the window!

I received this cake order very late and I wasn’t fully prepared for this order but I pressed on anyway. This cake was for my nephew’s birthday the next day and for family, you do anything you can to make it work.

This cake had so many issues. The cake was perfect. It was a 9” red velvet cake and the layers baked up nice and moist. No worries there. But the frosting!!! What in the world?!

This cream cheese frosting had so many issues and I’m not sure how it happened. I’ve made this frosting and 20,000 times before and never had this happen. The frosting was so loose, it was almost watery. The color was a weird beige color when normally it’s an off white. The texture was grainy which has never been the case before and it would not stay on the cake. 🤦🏽‍♀️

I finally had to call it quits for the night and let it sit in the fridge until the next morning. When I went to pull the cake out the next morning, the top layer of cake had slid almost off the bottom layer. 🤦🏽‍♀️😬

So, I decided to start again on this frosting. I removed most of the frosting from the cake and repositioned the top layer where it needed to be. I made up a fresh batch of cream cheese frosting which was perfect this time. I frosted the cake and added a green drip around the top then added some fondant letters to complete the cake. I let it sit in the fridge as long as possible before leaving to the party.

After all the struggle and stress this cake caused me, it ended up being absolutely delicious! I know because I was a guest at my nephew’s party and several people told me how good the cake was. I was thankful and relieved for the compliments and my nephew was happy. 😊

The whole point of this story is not all cakes are winners. Sometimes you have to accept defeat and start again. Sometimes it works out and sometimes it doesn’t. Not all cakes that I make are masterpieces but they will be delicious. Also, I had a really beautiful girl in the kitchen encouraging me to keep going. Thanks, Charlie Gail! 🧡

Finally, I made these birthday cakes for our Twins’ birthday yesterday! 🎮❤️👾💙🍒

Since the twins couldn’t decide on one theme together, we went with two! Caroline wanted a Minecraft cake and Carter wanted Fortnite. 💙🖤💜

Caroline requested a very specific cake lol! She wanted a Minecraft carrot cake in the shape of cherries… 🍒 😳 Challenge accepted!

Carter only requested a red velvet cake with cream cheese frosting and that’s exactly what he got. ❤️🎮

I made this super cute cake for a girl who turned 9 and who loves KATSEYE! 💜🎤🩷🎶 Her mom also ordered two dozen cookies to go along with the cake.

I think the cake and cookies turned out so cute and I adored the color scheme. 💜💕
