Her name was Teresa. Like most teens, she complained about being bored one day when her foster mom handed her a family recipe box and told her to find something to do. Teresa discovered the cupcake recipe, and has been turning black hearts to deep red hues ever since. Teresa’s daughter Juliana was deployed to Iraq. She could no longer take the stress of the law firm and have her daughter deployed
at the same time. In fact, she does not know how normal people do it. She decided to get a less stressful job that turned out to be worse than any job she’d ever had in her life. Someone might have told her to bake in jest after she was jobless. After much persuasion from friends and family, one day she woke up at 4 AM on a fine Saturday morning to go sell cupcakes. She took cupcakes for the first time to the Cedar Rapids Downtown Farmer’s Market in 2009. She sold out and had lines around the block each market day. While Teresa was wandering the downtown market she kept hearing people say, “Where did you get that cupcake?” The people would respond back ,”That one cupcake place over there!” She couldn’t think of a name and didn’t want to be cliche but in 2011 That One Cupcake Place became the official name. In 2012 a friend told her about NewBo City Market. She was against it because “blah blah blah blah.” A friend applied as a loving gesture without telling her. After applying, presenting, and taking samples Teresa was chosen as a Shopkeeper inside NewBo City Market. On October 27th of 2012 the market was unveiled and 20,000 people came through the doors that weekend. It didn’t take long to figure out the 200 square foot booth wasn’t enough. Regrettably there was no way Teresa could keep up with demand and do the Downtown Farmer’s Market, so it had to be put on hold for bigger things to come. In January of 2013 the Hiawatha lease was signed. There were delays, contractor disputes, and oven drama, but finally on November 10th of 2014 the doors were opened to our second location! In April 2015, Sundays were added to Hiawatha! It’s been open 7 days a week at 10AM since. That One Cupcake Place made a triumphant return to the Downtown Farmer’s Market in 2015, and even participated in the first ever Market After Dark. We left NewBo City Market in 2017 and are still going strong in Hiawatha! We are who we are because of Cedar-Rapidians and Hiawatha folks demanding and supporting local. We still hand scoop every batch. We don’t use box mixes. All of our flour and sugar is organic from local suppliers. Nothing is ever frozen. There is butter. Lots of butter. The amazing dairy comes from Hansen’s Dairy in Hudson, Iowa! Our boxes are from a local, Iowa business. Our stickers are from a local, Iowa business.
