Growing up just outside of Ft. Worth, Texas….brisket was king. Some things never change! We rub our brisket with just salt and pepper, then smoke them for 12-14 hours on post oak. It’s our least profitable item on the menu BUT also our favorite. We serve it either sliced or chopped, by the pound, or on one of our platters (Tom Landry Platter pictured). It’s not for all y’all but if you know, you know.
