Turnip with Turnip Green Soup and Side Salad
Ingredients:
For the Soup:
4 medium turnips, peeled and diced
4 cups chopped turnip greens
1 small onion, chopped
2 cloves garlic, minced
4 cups chicken broth
2 tablespoons butter
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon smoked paprika
1/4 teaspoon cayenne pepper
For the Side Salad:
4 cups mixed salad greens
1 cucumber, sliced
1 tomato, chopped
1/4 red onion, sliced
2 tablespoons olive oil
1 tablespoon vinegar or lemon juice
Salt and black pepper to taste
Instructions:
Melt the butter in a large pot over medium heat. Add the onion and cook until softened. Stir in the garlic and cook for another minute.
Add the diced turnips and cook for 5 minutes. Pour in the chicken broth and bring to a boil. Reduce the heat and simmer for about 20 minutes until the turnips become tender.
Stir in the chopped turnip greens, salt, black pepper, smoked paprika, and cayenne pepper. Simmer for another 15 minutes until the greens are soft and flavorful.
For the side salad, combine the salad greens, cucumber, tomato, and red onion in a bowl. Drizzle with olive oil and vinegar or lemon juice. Season with salt and black pepper and toss well.
Serve the warm turnip and turnip green soup with the fresh side salad.
