Ingredients⁠

Chocolate Swiss Roll Cake:⁠
1 1/4 cups (135 g) oat flour⁠
1/4 cup (30 g) cassava flour⁠
1/4 cup (30 g) cocoa powder⁠
1 tbsp arrowroot starch⁠
1 1/2 tsp baking powder⁠
1/2 tsp baking soda⁠
1/2 cup (122 mL) aquafaba, room temperature⁠
1 cup (200 g) organic granulated sugar or coconut sugar, divided⁠
1/2 cup (100 g) unsweetened applesauce, room temperature⁠
1/4 cup (60 g) unsweetened dairy free yogurt, room temperature⁠
2 tbsp cocoa powder for dusting the dish towel⁠
1 cup sliced strawberries, for garnish⁠

Strawberry Buttercream:⁠
1 cup (226 g) vegan butter, room temperature⁠
1 cup (70 g) freeze dried strawberries, pulsed into a flour⁠
1 can Native Forest Organic Coconut Cream, only the coconut fat⁠
3 cups (450 g) powdered sugar, sifted⁠
Vegan Ganache:⁠
1 cup (240 mL) Native Forest Organic Coconut Cream⁠

🍋Vegan Lemon Bars🍋⁠

Have a bounty of winter citrus? Make these sweet & tangy lemon bars 🤩 This recipe is entirely vegan and dairy-free but you'd never know 😉 They are thick, creamy, and make for the most perfect Veganuary dessert! 😋 🙌 Made with Native Forest Organic Simple Coconut Milk 🥥 by our friend ✨⁠

✨Crust Ingredients⁠
2 cups all-purpose flour (we used gf flour)⁠
1 cup vegan butter⁠
1/2 cup maple syrup⁠
2 tsp vanilla extract⁠
1/2 tsp salt⁠

✨Lemon Bar Ingredients⁠
1 cup Native Forest Organic Simple Coconut Milk*⁠
1/2 cup soaked cashews*⁠
1/2 cup lemon juice⁠
2 tsp lemon zest⁠
1/2 cup maple syrup⁠
1/2 cup granulated sugar⁠
1 tsp vanilla extract⁠
1/3 cup cornstarch⁠
pinch of salt⁠
pinch of turmeric (optional, for color)⁠

*Coconut cream: refrigerate a can of coconut milk overnight. Then when you open the can, scoop out just the solid part that has formed on the top & measure out one cup of this.⁠

*Cashews: soakcashews overnight in water ⁠

✨Directions⁠
Start by prepping the crust. Combine all crust ingredients in a large bowl & mix.⁠

Line a square baking pan with parchment paper & grease with oil.⁠

Transfer the crust ingredients to the baking pan & press them down into an even layer.⁠

Bake the crust for 15-20 min at 350*F, unti edges of crust are golden brown.⁠

Use a fork to poke holes all around the baked crust. Don’t poke all the way to the bottom of the crust, just about halfway.⁠

To make the filling, combine the coconut cream, cashews, lemon juice & zest, maple, sugar, vanilla, cornstarch, salt, and turmeric to a blender. Blend until smooth.⁠

Transfer lemon filling to a saucepan over medium heat. Stir continuously & cook for 4-6 minutes, until mixture starts to significantly thicken.⁠

Once it has thickened, pour it on top of crust & level the top.⁠

Refrigerate bars overnight, or for at least 4-6 hours, until the filling hardens fully.⁠

Once they are ready, slice, dust powdered sugar on top, & enjoy!⁠

DAIRY FREE PEACHE ICE CREAM 🍑 This delicious homemade ice cream is made with Let’s Do Organic Sweetened Condensed Coconut Milk and Native Forest Organic Peach Slices by .fit.peach Get the recipe below 😋 ⁠ ⁠

Ingredients⁠
1 can Let’s Do Organic Sweetened Condensed Coconut Milk⁠
1 can Native Forest Simple Coconut Milk⁠
1 tsp vanilla⁠
1/4 cup coconut sugar⁠
2 cans Native Forest Organic Peaches, drained⁠
crushed ice cream cone (optional, to top)⁠

Instructions⁠
In a blender, mix together the coconut milks, vanilla, coconut sugar, and 1 can of peaches; set aside⁠
Chop the other can of peaches into chunks⁠
Pour the coconut mixture into a pot with the chunks of peaches and heat over medium-low; let simmer for 2 – 3 minutes⁠
Transfer the mixture to an ice cream container and let it set in the freezer for at least 8 hours until soft and cream

Burger Ingredients:⁠
2 tablespoons coconut oil, divided⁠
1/2 yellow onion, diced⁠
2 stalks celery, diced⁠
2 cloves garlic, minced⁠
1 can Native Forest Organic Yellow Curry Jackfruit⁠
1 cup cooked quinoa⁠
1 cup Let’s Do Organic Chickpea Flour⁠
1/2 teaspoon salt⁠

Raita Ingredients:⁠
3/4 cup plain vegan yogurt⁠
1/2 cup diced cucumber⁠
1 green onion, chopped⁠
2 tablespoons chopped cilantro⁠
1/2 teaspoon salt⁠
1/2 teaspoon cumin⁠
1/2 teaspoon coriander⁠

Directions:⁠
Add 1 tablespoon of coconut oil to an oven safe cast iron pan or skillet over medium heat. Sauté the onions and celery until softened. Add in the garlic and sauté for another 60 seconds. Transfer to a bowl.⁠
Add the remaining ingredients to the bowl and mix well. Form into patties and add back to the pan with the remaining coconut oil. Cook until browned on both sides. Transfer to a 350 degree oven and bake for 20 minutes.⁠
Stir together all the raita ingredients and serve with buns, cilantro, and lettuce.⁠

Golden Milk Donuts⁠⠀⁠
Ingredients⁠
1 cup (240g) Native Forest Organic Turmeric Coconut Milk⁠
1/4 cup (60g) unsweetened applesauce⁠
1/2 cup (70g) coconut sugar⁠
1 tsp vanilla extract⁠
1 1/2 cup (180g) oat flour⁠
2 tbsp (15g) coconut flour (makes for a fluffier texture, more oat flour is okay too though)⁠
2 tsp baking powder⁠
1/4 tsp salt⁠
1 tsp cinnamon⁠
1 tsp ginger⁠
1/2 tsp cardamom (optional)⁠
Pinch of black pepper⁠⠀⁠
Glaze⁠⠀⁠
1 cup powdered sugar⁠
4-5 tbsps Native Forest Organic Turmeric Coconut Milk⁠
Shredded coconut for sprinkling⁠⠀⁠
⁠⠀⁠
Instructions⁠
Preheat the oven to 350ºF.⁠
Whisk together the Native Forest Organic Turmeric Coconut Milk, applesauce, coconut sugar, and vanilla.⁠
Add the remaining ingredients. Mix to combine.⁠
Pipe into a greased donut pan.⁠
Bake for 20-22 minutes at 350ºF. Cool completely.⁠
Whisk together the glaze ingredients, adding milk slowly to create a thick but drizzle-able glaze.⁠
Dip donuts into the glaze, shaking off excess.⁠
Sprinkle with shredded coconut and refrigerate until glaze is set. Eat!⁠⠀

Papaya Blood Orange Chia Seed Pudding ⠀⁠⠀⁠
⠀⁠⠀⁠
Makes about 4 servings⠀⁠⠀⁠
⠀⁠⠀⁠
Ingredients:⠀⁠⠀⁠
⠀⁠⠀⁠
For the pudding:⠀⁠⠀⁠
1 14 ounce can Native Forest Organic Papaya Chunks, drained⁠
1 – 1 1/2 cups non dairy milk (less for a thicker chia seed pudding)⁠
juice of 2 small blood oranges⁠
1/4 teaspoon sea salt⁠
2 tablespoons maple syrup, or to taste⁠
1/2 cup chia seeds ⠀⁠⠀⁠
To garnish:⁠
blood orange slices⁠
pistachios ⠀⁠⠀⁠
Instructions:⠀⁠
⁠Combine drained papaya, non dairy milk of choice, blood orange juice, sea salt, and maple syrup in a blender and blend until smooth.⁠
Whisk together with chia seeds in a glass tupperware until thoroughly combined.⁠
Let sit for about 10 minutes, whisk together again (to avoid and clumps!) and move to the refrigerator.⁠
Allow the chia seeds to absorb the liquid for at least several hours, or up to overnight.⁠
Serve with blood orange slices and pistachios and ENJOY!
