Join us Tuesday through Thursday from 5:00 PM to 6:30 PM for an exclusive happy hour featuring two brand-new cocktails, a refreshing spritz, a curated selection of wines, and three delicious bites created by Chef specifically for happy hour.

These off-menu offerings are available only during happy hour, making it the perfect excuse to stop by after work, meet up with friends, or start your evening with something special.

Simple ingredients, unforgettable flavor. Today we’re spotlighting Freeland’s most talked-about dish: our carrots.

Served with edamame hummus, Szechuan sauce, and everything bagel spice, this fan-favorite has become our most reviewed and most raved-about item, proving that simplicity can still steal the show.

Without further ado, we are so excited to introduce our Sous Chef and Kitchen Manager, Austin Hopley to our guests. From Manchester, England to the Midwest, Austin brings a wealth of experience, passion, and global perspective to the kitchen at Freeland’s Restaurant.

With over 14 years in hospitality and a decade as a professional chef, Austin built his career across bars, restaurants, and hotels in Manchester. He served as a Sous Chef within the hospitality division at the iconic Etihad Stadium, home of Manchester City F.C., before launching and operating his own wine bar and catering business for three years.

With family roots in Indiana, Austin returned this past September, relocating to the Indianapolis area and bringing his entrepreneurial spirit and international experience to our team.

Austin is tremendously humble, but we would be doing him a disservice if we didn’t mention how excited we are to have his creativity, leadership, and love of hospitality shaping the dining experience in Carmel. He is also just a lovely, hard-working, and dedicated human being. We are so happy and thankful to have him on our team!

If you’ve dined with us recently, you’ve already experienced Austin’s impact. With five months at Freeland’s under his belt, we’re just getting started and very much looking forward for what’s to come!

Join us on Wednesday, June 17th at 6pm for an exclusive 5-course wine dinner featuring 5 carefully curated pairings from Belle Glos and Quilt by Joseph Wagner.

This special evening highlights two of the most recognized names in Napa Valley winemaking, Belle Glos and Quilt Napa Valley, both crafted under the vision of fifth-generation winemaker Joseph Wagner. Known for his bold, expressive style and philosophy of “Go With Your Palate,” Wagner has built a portfolio celebrated for richness, approachability, and consistency across some of the West Coast’s most distinctive vineyard sites.

From the iconic, vineyard-designated Pinot Noirs of Belle Glos to the deep, layered Napa Valley expressions of Quilt, each course will be paired to showcase the character, depth, and craftsmanship that define these wines.

Join Freeland’s Restaurant for a curated series of pairings designed to highlight the expression of each wine.

Pricing: $150 per person, plus tax and a 22% automatic gratuity.

Reservations: A credit card is required to hold seats. A cancellation or reduction fee of $75 per person will apply for changes made within 72 hours of the event, this is non-negotiable regardless of reason.

Doors open at 5:30pm, and the event will begin promptly at 6:00pm.

Brand representatives from Belle Glos and Quilt will be in attendance throughout the evening, offering insight into the wines and the winemaking philosophy behind them. While Joseph Wagner will not be present, his vision and influence are strongly represented through the portfolio.

Seats are limited. Reservations are required.

Our Tuna Tataki with Watermelon is back!

Lemon myrtle compressed watermelon, radish, cucumber, wasabi aioli, sweet soy, and crispy wasabi peas. Bright and refreshing balance of flavor and texture.

The Norwegian Brown Trout is served over a springtime ragout of English peas, soy beans, and Roman artichokes, finished with a rich morel mushroom broth.
