Executive Chef Justin Cogley’s and Pastry Chef Yulanda Santos’ cooking philosophy is built first and foremost on spontaneity. With access to an array of outstanding local products as well as ingredients and artisan purveyors from around the world, Cogley and Santos focus on incorporating these elements into their ever-changing menus. The Chef’s Tasting Menu, which changes daily, is designed by the

chef and is drawn from a list of up to 20 ultra-seasonal ingredients that may appear as either a main component of a dish or as an accompaniment. Integral to the Chef’s Tasting Menu are the elements of surprise and spontaneity: each dish is a natural progression in flavor and reflects the chef’s imaginative artistry and ability to create a gastronomic journey from 20 pristine ingredients. For a supplement, course-by-course wine pairing are chosen specifically for each course.

Please congratulate our new Executive Sous Chef

Her journey has taken her through Michelin-starred kitchens such as The Restaurant at Meadowood, Madera, and Manresa. Most recently, she held the position of Sous Chef at Post Ranch Inn’s Sierra Mar Restaurant. She learned the importance of using garden ingredients, as well as honing her skills with meat butchery and cooking. Tiffany finds inspiration from the bountiful produce of California and the people around her. Here at Aubergine, she will continue to work with Chef Justin and continue to grow herself and her peers through culinary knowledge and experiences.
