The Friday Night Boys 😂🐶

It’s not only Margo, Lucy & Piper who are happiest when they get the same shift… these three gentlemen are exactly the same!

Put Kai, Jools & Kayleb together in the kitchen and suddenly we have three puppies who argue about absolutely EVERYTHING. 😂 Who’s right, who’s wrong, who did what, who started it… meanwhile, somehow, the work still gets done!

And honestly? When these three work together, they’re our little dream team. 💚 Dishes are handled, floors are clean, supplies are stocked, and they help me so much in the kitchen that our busy Fridays feel a whole lot easier.

Of course, they also spend half the night arguing with our front-of-house girls… apparently that’s part of their job description too. 🤦🏻‍♀️😂

They’re loud. They’re crazy. They annoy each other. They annoy the girls. But we love having them here. Without these three, Friday nights would be way too quiet… and Dirk and I would probably be crawling home by the end of the night. 😂

NEW APPETIZER: Kai’s Drunken Tofu! 🌶️

It started as a Wednesday snack. While we were waiting for customers, Kai made himself some spicy fried tofu and offered us a taste. One bite and we knew it had to go on the menu!

Crispy tofu with a savory, sweet, spicy sauce and just a little tang—it’s so good you’ll want every last piece. We’re proud of Kai for creating something this delicious.We love watching our young team learn, experiment, and grow in our kitchen. And we’re especially proud when something they create becomes part of The Green Papaya. 💚

Our Sour Pork Fried Rice is one of the most special dishes Mom and I created together. We were missing our hometown in Northern Thailand and thinking about the homemade sour pork my aunt used to make for me when I was little. Even after all these years, I can still remember that flavor so clearly.

At first, we weren’t sure if we should put this dish on our menu. It’s such a personal, home-style flavor from our family, and we didn’t know how everyone would feel about it.

But then we thought… it’s simply too good not to share! 😂❤️

And seeing so many of you fall in love with this dish makes us incredibly happy. Every plate feels like we’re sharing a little piece of our home, our childhood, and our family with you.

We’re always talking about our young team… but today, let’s introduce you to one of the amazing women behind the scenes — Jum! ❤️

Jum is basically the back-of-the-house mama… or should we say babysitter? 😂 She helps keep all of us in line!

So much of the prep that goes into your meals passes through Jum’s hands. Vegetables, crispy chicken, sesame chicken, duck — she’s behind the scenes cutting, prepping, cleaning, and helping me guide our younger team in the kitchen.

And the crazy part? She also works at Marshalls and still finds time to come help us on the weekends! 🥹

Jum is one of the kindest, most hardworking women you’ll ever meet, and she is truly adored by everyone here. Our young team loves her, and Dirk and I are so grateful to have her as part of our crazy little Green Papaya family.

Thank you, Jum, for everything you do behind the scenes. ❤️🌿

Meet our beautiful Gracie! 💚🌸 Gracie 🌄

Grace joined The Green Papaya family sometime in May. I still remember the first day she walked through our door looking for a summer job. She was a little nervous and not very confident, so I asked her, “What days would you like to work?”

Her answer?

“I can work every day if you want me to.”

Okay… HIRED. 😂 We adored her from that moment.

The Green Papaya is Grace’s very first job, and you would never know it. After only about a month, she could already help Dirk run pretty much the whole restaurant! Sometimes we joke that Grace works like she owes money to the mafia. 🤣 Girl does NOT play around when she’s on the clock!

When summer ended and school started again, we thought we probably wouldn’t see much of her anymore. School comes first, of course, and we know she needs time to study. But nope! Whenever Grace has a free weekend, somehow she finds her way back to The Green Papaya, ready to work with that beautiful smile and brighten our day.

This young lady truly is one of a kind, and we’re so lucky to have her. ❤️

One of our favorite things about our team is that these kids come from different towns, different schools, and different backgrounds, but when they walk through our doors, they become The Green Papaya family.

At the end of a busy night, I love cooking for them and watching everyone sit down together, eat, laugh, gossip, and tell stories. And then there’s Dirk and me — the two old people sitting there quietly enjoying the teenage conversations like it’s our favorite TV show. 😂

These little moments mean more to us than they probably realize.

We’re so grateful for Grace and for every hardworking young person who has become part of our little restaurant family. 💚

Keep shining, Gracie. We’re so proud of how far you’ve come since that nervous girl walked through our door in May. 🥹💕

Today, let us introduce you to this lovely young lady, Brooklyn —The Green Papaya’s youngest daughter! 💚

No, she doesn’t have Thai or Belgian blood—she is 100% Australian! 🇦🇺 Brook has been part of our Green Papaya family since she was 15. She started with zero experience, washing dishes behind the scenes. We later moved her to the front so she could learn something new, and now, at 16, she can help us run the whole front of the restaurant!

Brook especially loves selling our Belgian chocolates. She knows every chocolate inside and out, so if you need help choosing, she’s your girl! 🍫

She is one of the hardest-working young women we have ever met. She’s always asking for more hours and looking for ways to improve herself.

“It’s better than staying home bored,” says Brook. 😂

We are so proud of you, Brook! That hardworking Australian spirit has definitely not disappointed us. Keep learning, keep growing, and keep going—your future is so bright, we need sunglasses! 😎✨
