It has been awhile since I have updated on the Boxcar. Things are going well! We have made so many new friends...what a blessing! We continue to add new items to our menu so we can offer you all a choice of something different when you visit. Thank you all for your support and patronage at our diner! Hugs

Good days at the Boxcar!! Serving Hamburger Steaks tomorrow...always a favorite! Also cooking some turnip greens and pinto beans to go with the cornbread that will be added...as well as creamed potatoes! You all will be full tomorrow! We appreciate all our customers and am always glad to see you!! Such a good feeling to enjoy what one does!

had our first catering job. We cooked bbq pork and beef, beans, slaw and potato salad for 45-50 people. All feedback was postitve! Very excited about expanding this side of our business. My prayer for 2012 is that we continue to serve you good food at a reasonable price and in a timely manner. That is our goal!

tomorrow we are serving baked pork chops in mushroom gravy, sweet potato casserole, turnip greens and cornbread as our daily lunch special! yum, yum. Come on to the Boxcar and wrap a lip around that!! Hope to see you there!

is very excited about our new year of operation!! We have plans to continue expanding our menu and appreciate the positive comments we are receiving!! We are pleased to serve previous owners Rick Garcia and Jason McKinney as well as receiving their compliments on our food! So exciting to know that we are headed in the right direction in our mission to serve you good food and in a timely manner!! Come on out and see what we are up to!!

Rick's Boxcar will re-open tomorrow 1/3/2012! We have made some additions to our menu. As promised, we have added 2 salad choices as well as some other items. We are working on the addition of a salad work station in our kitchen so that we may add more salad choices. Rick is also working on creating a new recipe for a fat free salad dressing to add to our other dressings. Knowing his reputation for success, it will be great!! The Boxcar will also be closed Monday 12/26/11....yea a looooong weekend! Will sure miss all the new friends I have made at the diner! But, will see everyone tomorrow! So glad my special plate lunch was enjoyed by so many today! It was cooked with love 3>

this weekend we will work on next weeks menu for our daily lunch specials. Any requests?? We are enjoying cooking for you! Never thought that in my retirement I would be saying, "do you want fries with that"..lol. Really are having a good time! See you all next week!

reminding all that Rick's Boxcar Diner will be open tomorrow. No lunch special but, will have plenty of those good burgers and fries! Also, bbq, club sandwiches and etc!! No Gumbo until next week. Sold out! Rick will make a fresh batch Sunday night. Hope to see you all there!
