If you've never had an authentic Italian beef sandwich in Chicagoland, you couldn't possibly know what you're missing. But don't take my word for it, please let Elizabeth and Tia tell you all about it!

This is the first segment of TV6 Upper Michigan Today's visit back when I was in Houghton. We will post the other segments in coming days to give you a feel for what the authentic Italian beef sangwich experience is all about.

Eventually, the Calumet Eatery will grow into a sandwich shop with lots of options like premium sliced smoked turkey and ham, pulled chicken, and guest chef creations. But for now, on our limited budget, we're going to go with what we know...
Italian beef and sausage sangwiches, pitas and bowls.

In Chicagoland, putting anything other than sweet peppers or giardinera onto an Italian beef sandwich is a travesty almost as severe as putting ketchup on a Chicago dog.

So, since I will be going to Chicago about every week to pick up fresh beef, maybe I should stop calling these creations "Italian beef variations." I'd hate to work this hard to get this place open and then turn around and get shot for disrespecting Chicago's legendary, iconic sangwich.

So ladies and gentlemen I am proud to introduce the next candidate... The Argentinian beef!

While at my last gig in Marquette, one of my awesome neighbors, Melissa from HOTplate Pottery and Clayworks, gave to me as a gift this custom video from Hope at HC3. Thanks again Melissa! ❤️

Yes the location of my 8 ft square kitchen wasn't exactly ideal, but it was a learning experience. The best part of working 7 days a week hidden away on the lower level at the Masonic Square Mall were the friendships I made with Melissa and Chris, Joy, Cindy and other awesome tenants. 🤝

The new kitchen in Calumet is almost complete and I'll share some pics soon. So close to opening I can almost taste it! 😋

Last summer Carolyn Peterson told me a heartwarming story about how a kids football game opened minds and it prompted me to write this song. I just saw her at church this morning and finally had the chance to share it with her. I wanted to make sure the lyrics captured her sentiment before putting it to music.

I read the lyrics to her this morning, and she didn't want to change a word... she wanted to know how we could share this message with the world immediately; pointing out the timing today with the Super Bowl and the Olympics. So I put the lyrics to some music and I hope you like the message.

Now if we can all please ask Carolyn very nicely to sing the lead vocals, all we need to do is assemble a choir behind her and record a live performance! Any volunteers?
