✨ Wrapping up an wonderful spring semester together 💚🌸🍽️

From Cheese & Dairy Fest and the 3rd Annual Catamount Culinary Showcase to our Local Meets Global Series and Earth Day Dinner, this semester was full of incredible food, community, and memories.

We loved cooking alongside you in our classes, welcoming Chef Tom Flurij from The Netherlands for our Global Chef events, showcasing student creativity during the Nutrition Class Station Takeover, trying tasty treats with the Cone Crush event, and helping everyone recharge with Build Your Own Açaí Bowls during finals week. 🌎✨🍦

Thank you, Catamounts, for bringing the energy, excitement, and joy to every meal and event this semester. You make our dining community so special. 💛

Happy Earth Day!
We’re celebrating with some seriously delicious plant-forward meals in our dining halls tonight—because choosing more plant-forward options isn’t just good for you, it’s good for the planet too.

So what does “plant-forward” actually mean?
It’s not all-or-nothing—it’s about centering your meals around plant-based foods like vegetables, fruits, whole grains, beans, nuts, and seeds, while incorporating smaller amounts of animal products if you choose. Think veggie-packed grain bowls, hearty salads, bean-based dishes, or swapping in plant proteins more often throughout the week.

Eating a plant-forward diet helps:

Choolaah is officially open in the University Marche, and we couldn’t be more excited to welcome this vibrant new addition to our community! Known for its delicious Indian BBQ and fully customizable bowls and wraps, Choolaah brings bold, delicious flavors made with fresh, wholesome ingredients. Whether you’re looking for vegan, vegetarian, or gluten-free options, there truly is something for everyone to enjoy.

We’re especially thrilled to share that this marks the very first Choolaah location in Vermont—a milestone we’re incredibly proud to celebrate. Today’s ribbon cutting event made it all the more special, and it was amazing to see such enthusiasm as we officially opened our doors. A special shoutout to everyone involved in making this happen and who stopped by the event today!

We can’t wait for everyone to stop by, explore the menu, and experience everything Choolaah has to offer. We can't wait to see you soon!

🏆🍽 We are thrilled to announce the winners of the 3rd Annual Catamount Culinary Showcase…
Down To Fry! Their winning dish? Grandma’s Holy Pierogi, a traditional Eastern European dumpling stuffed with potato & cheddar cheese, paired with caramelized onions, sour cream apple sauce, & pancetta.😋

Taquitos Del Dia, who brought delicious Pork Carnitas Tacos served with pico de Gallo/guacamole/diced onions/cilantro/lime/hot sauce!

Returning team Cooking with Cash the finance team from the Student Government Association, who brought Crostini Duo and a Blood Orange Shooter!

Rue 66, who shared their wonderful dish of Lamb with Au Gratin Potatoes & Mint Pistou!

The Fermentation Club, who made Kimchi Aranchini over a Gochujang Yogurt Sauce with Kombucha!

Hye Voltage, a talented group from the Armenian Students Association, made wonderful Cheese Boregs with a Tomato Cucumber Salad

We’re beyond grateful for the amazing turnout, everyone who voted for their favorite dish, all the students, staff, and faculty who came to show their support! We’re already looking forward to next year’s showcase!

On Monday and Tuesday this week, we had the incredible honor of welcoming James Beard award-winning chef, artist, and author Bryant Terry to UVM for a truly unforgettable presentation and Meet the Chef experience.

Chef Bryant Terry brought his plant-forward, globally inspired cuisine to campus, sharing a powerful blend of flavor, storytelling, and cultural history. Through conversation and a shared meal, the campus community got a meaningful glimpse into Bryant Terry's work.

A huge thank-you to Chef Bryant Terry, our incredible UVM Dining team, and everyone who joined us throughout the day. Events like this show the power of food to connect our community!

🍳✨UVM Dining is celebrating student recipes and cultures with our 3rd Annual Catamount Culinary Showcase on March 25! 🐾🔥
Students will create teams with 4-6 other students and submit a recipe to be selected to team up with a UVM dining chef who will prepare and serve 400 small plates of your dish. 🏆
Every participant will receive a culinary prize & each member of the “Fan Favorite” team and a guest will be treated to a private dinner at Waterman Manor!
