Walking into Dumpling Kitchen & Bar in downtown Burlingame, I wasn’t just there for the food. I was there because I’d heard about Jimmy, the owner — 30 years old, an immigrant, doing it all from scratch.
Navigating the competitive landscape of Chinese cuisine in the Bay Area, where the bar is already extraordinarily high. And not only is he doing it — he’s doing it beautifully.
What moves me most about people like Jimmy isn’t just the hustle. It’s that he has every reason the world would accept as a valid excuse to take it easy, to wait, to say “not yet.” And instead, he’s here — every single day — personally serving his guests himself, table to table, making sure everything is exactly right.
That kind of ownership (literally and figuratively) is rare.

🥟 The Xiao Long Bao are the real deal: impossibly thin skin, a burst of clean, non-oily soup in every bite.
🍫 The Chocolate Mochi Xiao Long Bao — yes, you read that right. Jimmy made these for us, and it was one of those unexpected moments that just made the whole experience even more memorable. Sweet, playful, and somehow perfectly executed. The creativity here doesn’t stop at savory.
🥟 The Pan-Fried Buns — Jimmy’s own recommendation — were the showstopper of the meal. Crispy bottom, juicy inside, and dangerously addictive.
🍜 The Scallion Oil Noodles had that perfect QQ bounce with a rich, savory glaze that coated every strand without getting heavy or clumpy.
The kitchen cares about everything on the menu, not just the headliners.
Every detail here is intentional — from the beautiful blue-and-white porcelain sauce sets to the warm, lively atmosphere overlooking a busy Burlingame intersection.
