To our new Buffalo family,
We always want to greet you with a smile and serve the best food we possibly can. Behind those smiles, though, the past few weeks have been some of the hardest we've faced since opening our doors...
We want to be transparent about part of why our menu is currently limited and why we're encouraging takeout over indoor dining for the time being.
🔥 The Heat & AC: During recent building renovations, our kitchen ventilation system was altered, and the exhaust hood isn't pulling air the way it should. On top of that, our main air conditioning has reached the point where it needs to be completely replaced. Right now we're relying on a temporary system that leaves our kitchen brutally hot. To protect our incredible staff, we've had to temporarily scale back some of our highest-heat menu items.
💨 The Dining Room: Because the ventilation isn't capturing smoke properly, it occasionally finds its way into the dining room. That's not the experience we want anyone to have, which is why we've been putting our energy into takeout until these issues are finally resolved.
❄️ The Walk-In Cooler: As if that wasn't enough, our walk-in cooler has begun intermittently freezing fresh food. We've already paid out of pocket to have it repaired once, and as an independent restaurant, it's incredibly difficult to keep paying for contractors to fix more problems.
Real talk, the past few weeks have been utter hell! 85°+ in a smoky kitchen completely wears on you! 💨 🥵 There are moments when you're stretched so thin, physically exhausted, mentally drained, and still trying to pay back every creditor while bringing home little to no income. But you know what?
In those moments, you don't quit. You shut up, put your head down, and grind forward with everything you've got. That's exactly what we've been doing. We were forged out of a tiny hot food truck, so it's not like we haven't been through something like this. We know we're not any more special than any other food establishment enduring the same good fight we are... Hence the radio silence ...😅
We refuse to let these obstacles define who we are. Every day we unlock these doors, fire up the kitchen, and give everything we have because we believe the food we make, and this community is worth fighting for. 💪
