It started with one person on the third floor of an office in Amherst ordering chicken biryani for lunch.

Then it was two. By the end of the month the front desk was calling in an order for eleven and asking if we could do it every Thursday.

We could.

Our chicken biryani is the one that does that. Chicken cooked down in a fragrant masala, layered with saffron rice, sealed and finished in the pot so every grain is separate and every grain tastes of something. Raw onion, green chili and raita on the side. It travels well, reheats well, and makes a desk lunch feel like something you chose on purpose.

Halal, made fresh every day, ready for pickup or catering across Buffalo, Tonawanda and Amherst. Office orders welcome. We’ve had a few Thursdays turn into ten years.

Tag the coworker who started it at your office.

People ask why the food tastes different here. The answer is on the table in front of you.

Every handi at Clay Handi is a handmade clay pot, shaped and fired by artisans in Pakistan and shipped to Buffalo. Clay holds heat evenly and gives it back slowly. It lets a karahi finish at the table and keeps a biryani steaming long after it arrives.

It is also how this food was always cooked. Before steel, before non-stick, there was clay, and the recipes we use were written for it.

We are the only Pakistani and Indian restaurant in Buffalo NY that cooks and serves this way, and it is the reason we carry the name.

Next time the lid comes off, look at the pot. It came a long way to get to your table.

Some things about our kitchen have not changed in ten years.

Every dish is halal. Every masala is ground and blended here, not bought in a jar. The nihari and paya start the night before. The biryani is layered and sealed by hand. The naan is made to order. The pots are seasoned clay, not steel.

This is how Pakistani food is cooked at home, and it is the only way we know how to cook it.

If you are looking for a halal restaurant in Buffalo NY where the food is made from scratch rather than reheated, this is what we have been doing on Delaware Ave since we opened.

Come taste the difference. Then ask the kitchen how long the nihari took.

Some occasions need more than a table for four

Clay Handi seats 150, which makes it one of the largest Pakistani and Indian restaurants in Buffalo NY and the place Western New York families book when the whole family is coming. Birthdays, graduation dinners, engagement parties, office celebrations, and the family reunion where cousins fly in from Toronto and Karachi.

Family-size handis, biryani for the table, and a kitchen that has fed a room of 150 many times over. Halal throughout, so nobody has to ask.

We also cater across Buffalo, Tonawanda and Amherst for events, offices and gatherings of any size.

If you have a date coming up, call ahead. We will make sure the room is ready

Every Buffalo parent knows the negotiation. “Just try one bite.”

We’ve watched it play out at our tables for ten years. The parents order what they grew up on. The kids want nothing to do with it. Then the makhni karahi arrives.

Chicken in a buttery tomato and cream gravy, gently spiced, finished with a swirl of cream and fresh coriander, served bubbling in the clay pot with hot naan for dipping. Rich, mild, and the closest thing on our menu to a guaranteed clean plate.

We’ve had eight-year-olds from Tonawanda ask for it by name. We’ve had grandparents from Lahore admit it’s better than theirs. That range is the whole point.

If you’ve been looking for a family-friendly halal restaurant in Buffalo NY where everyone at the table eats, this is the dish that makes it happen.

Sunday dinner, high chairs available, 150 seats. Bring the picky one.

Every table has one. The guy from Tonawanda who says “extra spicy, I can handle it,” and means it right up until the third bite.

We don’t say anything. We just bring the lassi.

Thick yogurt, ripe mango, a little cardamom, blended until the spoon stands up on its own, and served the way it’s served at home: in a clay pot with clay cups, cold enough to sweat on the table. It’s the sweetest thing on our menu and the only thing that’s ever settled a spice argument in Buffalo.

It’s also the drink the kids fight over, the one the grandparents order without looking, and the reason a lot of first timers at our Pakistani restaurant in Buffalo NY take their first photo before the food even arrives.

Order the karahi as spicy as you like. We’ve got you either way.

Sunday, 9:30am. Before the game-day crowd, before the brunch crowd, there’s a table that’s been coming for years. Our breakfast menu is available all week from 9am to 2am.

Fathers and grandfathers, mostly. Men who came to Buffalo in the eighties and nineties, worked the plants and the cabs and the shops, raised families here. They don’t look at the menu. They order paya.

Goat trotters slow-cooked overnight until the broth turns thick and glossy and the meat slips from the bone. Served with lemon, green chili, fresh ginger and naan for soaking. It’s a dish that takes patience to make and patience to eat, and it tastes like a Sunday morning in Lahore.

For a lot of Buffalo’s Pakistani community, our paya is the closest thing to home that’s still open at 9am. For everyone else, it’s the dish the regulars will tell you to try if you ask.

Goat paya in Buffalo NY, made the old way, every morning from 9am. Come early. Sit near the window. Ask the table next to you how long they’ve been coming.
