Mornings look a little different around here this time of year.

The vineyard comes to life early as the sun rises over the vines and another day of harvest gets underway. It’s a season of early starts, long days, and watching months of work finally make its way from the vineyard.

A view from the heart of harvest.

Today, we’re making our way through the Tabor Hill vineyard to harvest Seyval grapes, one of the varieties that helps create our Classic Demi-Sec.

But harvest is far from a one-day affair. Over the next several weeks, our team will move through the vineyard as each grape variety reaches its ideal time to be picked. Different grapes, different timelines, all part of bringing another vintage from the vineyard to the bottle.

Harvest has begun at Tabor Hill.

We couldn’t have asked for a better morning to begin picking. Cool air, clear skies, and our team out in the vineyard bringing in the first grapes of the season.

While much of the vineyard can be harvested mechanically, some rows require a hands-on approach. Where the equipment can’t fit, our team heads into the vines to pick by hand.

It’s the beginning of one of the most important times of year at Tabor Hill, and we’re looking forward to sharing more of the 2026 harvest as it unfolds.

This morning our team joined Fox 17's Morning Mix with Michelle and Todd for a sneak peek at what's new at Tabor Hill! Highlighting our new menu items from Chef Justin Carlisle, new w**es, and spirits from Round Barn W**ery & Estate.

Our new menu is something to be experienced. Shared and celebrated, from the first bite to the last sip. We're not cooking food that could be from anywhere, we're cooking food that could only be from here. Southwest Michigan's ingredients don't taste the same anywhere else, and our job is simply to let them speak.

Honoring 59 years of Tabor Hill history while building something that's truly a destination for Southwest Michigan food, w**e, and hospitality.

There’s a reason Chef Justin Carlisle’s name carries weight in the culinary world.

Before joining Tabor Hill, Chef Justin was the chef and owner of Ardent in Milwaukee, where his cooking earned him national recognition and four consecutive James Beard Award nominations.

For those outside the culinary world, the significance of that distinction can be easy to miss. The James Beard Awards are among the highest honors in American food and dining, recognizing exceptional talent and leadership across the country.

His approach to food is rooted in where he came from. Raised on a small beef farm in rural Wisconsin, Chef Justin brings a deep respect for agriculture, seasonality, and the people behind the ingredients to everything he creates.

Now, that experience is shaping a new culinary chapter at Tabor Hill.

Our menu celebrates the ingredients and flavors of Southwest Michigan through thoughtful technique, a connection to the region, and the kind of cooking that makes what arrives at the table worth slowing down for.
