Someone asked a good question today and I’m not sure of the answer. Locals - what restaurants in town are older than us in the same location and maybe the same ownership? I can think of one or two off the top of my head but curious who’s been around for more than 31 years? I’m thinking we can be in the top 5 or so? Pepe’s, C&J’s or Martin’s Bbq are all I can think of.

Today is the day. 31 years! Hard to fathom how different life is today than it was 31 years ago. I woke at the same time. Maybe a little more stressed then. Or maybe not - I was 22 and seemingly invincible. Today, two of my girls Cami and Adrienne took it upon themselves to decorate the place and make us look festive. I’m so thankful to have (and have had) so many people in my side helping me every step of the journey. Restaurants are never easy. In fact, some call it the most difficult business out there. But thanks to the support and efforts of so many, here we are 31 years later. A toast to us. And to you for keeping us going. Happy anniversary Caffe’ Capri

nother question I’ve gotten lately: ‘When did things get easy and when did you know you were going to make it?’ Great question, but I think if you ask any small business owner you will get the same answer - we don’t. I’m one slow day away from changing my concept to a Chinese buffet (I’m kidding - I don’t know how to cook Asian ;)). But seriously, it’s never been easy so to speak. If you remember from my past stories, we started getting busy after year two which means I started paying off some bills. Then a few years later, the revitalization of downtown began and I had no streets - for 9 months. It was like a Flintstones episode - the streets were all torn up and when 5pm hit, the tractors and bulldozers would be left where they were. My entrance was a piece of plywood. And of course, business suffered and bills started piling up again. Then we got busy again and downtown was a beautiful place. A few years later, we had a dry two years - no reason why - it just happened and it was tough. I sold my dream car that I owned and kept going. I never laid anyone off or took away shifts. Then we got busy again. Then a few years later, Covid hit. We got through it, again, without taking away shifts or cutting anyone’s pay - but my goodness. I tell my wife I’m glad I wasn’t stressed during that time - she laughed and told me I was so worried. Good thing my memory doesn’t remember. And since then, we have been busier than ever and for that, I’m so thankful. People love our food, our staff and our vibe - that’s the dream. So, is it ever easy - no. But I’m still glad I did it and I’m glad we perservered through it all. 31 year anniversary month

Our art wall wasn’t always a thing. Years ago, my sweet friend Sheree Boegner (who would later become my grooms-lady at my wedding) and I were having our weekly dinner. We came up with the I ❤️ Carbs slogan as a slight to the Atkins craze that was going on. She went outside and chalked up our wall and it started with that. So many people loved it and took pictures with it and even with the chalk, it stayed. Later, my wall became a chalk place for Sheree as she supported her many causes. Then, on one of my first few dates with Erin Wheeler Cerone, I found some murals in Waco and we took selfies (also so I could sneakily hold her hand but that’s a different story;). After that, I realized that people liked art walls and I had a huge empty space on the side of my building. Our friend Sarah Shelton Blackmon came and permanently painted the carbs one. A trip to New York with my oldest daughter Rossi created the ‘I’m sorry for what I said when I was hungry’ as I realized that hanger is a real thing. The smile one is dear to me - if you know me, you know I’m always smiling (sometimes my face hurts). After 30 years of seeing thousands of people walk through our doors, I firmly believe that a smile makes all the difference in a first impression. And lastly, I loved seeing art so Sarah and I thought of the Rossi jumping into my arms artwork. I absolutely love seeing people take pictures in front of my wall and it makes me happy every time. More to come as we celebrate our 31 year anniversary month
