Chef Tai Choo takes his inspiration from the California style taco trucks from his childhood, adds recipes passed down in his family and fresh ingredients in his food. As a local family in Brunswick we are excited to provide food that is, not only authentic, but also fresh and fun. rse population of this area. Chef Tai grew up in a large family where food was seen as an event that brought family and friends together. His family was a huge inspiration (especially his father, Gilbert and his loving Nana Sarah) in his career choice. After graduating from culinary school, Tai traveled throughout the country working in many culinary environments, from fine dining to a beach club in Naples, Florida. He has spent the last two years as the head chef and kitchen manager at Blueberries Food and Drink in Topsham. He has always dreamed of opening a taco trailer reminiscent of the taco trucks he grew up visiting, so here is Taco the Town!
