Chef Tai Choo takes his inspiration from the California style taco trucks from his childhood, adds recipes passed down in his family and fresh ingredients in his food. As a local family in Brunswick we are excited to provide food that is, not only authentic, but also fresh and fun. We are striving to add a new dimension to the street food community, one that appeals to all ages throughout the dive

rse population of this area. Chef Tai grew up in a large family where food was seen as an event that brought family and friends together. His family was a huge inspiration (especially his father, Gilbert and his loving Nana Sarah) in his career choice. After graduating from culinary school, Tai traveled throughout the country working in many culinary environments, from fine dining to a beach club in Naples, Florida. He has spent the last two years as the head chef and kitchen manager at Blueberries Food and Drink in Topsham. He has always dreamed of opening a taco trailer reminiscent of the taco trucks he grew up visiting, so here is Taco the Town!

Jimboys’s Taco on special today!

Plus a very special treat baked by our fabulous Courtney: Mexican style Carrot Cake Whoopie Pies—baked with a touch of cayenne and cinnamon, filled with all the deliciousness of our cream cheese and marshmallow filling. We have a limited supply, so come down early to grab one!

Huge news, Brunswick! Taco the Town was named the 2026 Best Food Truck Winner in Down East Magazine!
Honestly, an award like this is a direct reflection of the crew slinging food, feeding the community, and holding down the line every single day. Huge love and appreciation to:
-Courtney, our killer Prep Cook and baker who keeps us all stocked up.
• Gilbert, my dad, who roasts all the veggies for our fresh salsa along with several other key jobs
-Jess, my wife, who handles all the vital behind-the-scenes magic—from booking private events and answering emails to tackling endless small business owner projects
• Noah, Rory, Kimberly, and Ashleigh for bringing the energy, dedication, and hustle that keeps this engine running(they can do every job/position)

Happy Saturday!
Our hours today will be 8 AM to 2 PM. Come by and grab a hot breakfast burrito—we’ve got both a great vegetarian option and one loaded with chorizo—or grab your favorite lunch item
We are also fully stocked on our favorite and super popular Mexican hot cocoa cookies that Courtney whipped up.
HEADS UP for our weekend regulars: For anyone who can only make it out to see us on Saturdays, we wanted to let you know that we will not be on the mall for the next two Saturdays (AUG 29 & SEPT 5)due to private events. Today is the day to come on down and get your fix!

Adobo Chicken is back today! Supply is limited, so grab it while it lasts! We’re opening early around 8:00 AM and running until 2:00 PM.
We also want to be completely transparent with our community regarding the recent Cyclospora outbreak linked to iceberg lettuce in Maine:
No Iceberg Used: We do not use iceberg lettuce in any of our menu items.
Fresh Romaine: We exclusively use fresh whole Romaine hearts and chop them in-house daily.
Proactive Monitoring: We are in direct communication with our distributors to ensure immediate notifications in the event of any product recalls.
