Chef Tai Choo takes his inspiration from the California style taco trucks from his childhood, adds recipes passed down in his family and fresh ingredients in his food. As a local family in Brunswick we are excited to provide food that is, not only authentic, but also fresh and fun. We are striving to add a new dimension to the street food community, one that appeals to all ages throughout the diverse population of this area. Chef Tai grew up in a large family where food was seen as an event that brought family and friends together. His family was a huge inspiration (especially his father, Gilbert and his loving Nana Sarah) in his career choice. After graduating from culinary school, Tai traveled throughout the country working in many culinary environments, from fine dining to a beach club in Naples, Florida. He has spent the last two years as the head chef and kitchen manager at Blueberries Food and Drink in Topsham. He has always dreamed of opening a taco trailer reminiscent of the taco trucks he grew up visiting, so here is Taco the Town!

It’s going to be chilly and windy tomorrow, so we’re whipping up a nice big pot of our ever-popular chicken tortilla soup!
Loaded with fresh vegetables, plenty of garlic, warm spices, and cilantro, then finished with crunchy tortilla strips and cheese. Available by both the cup and the bowl.
Plus, there’s a fun fall event on the mall tomorrow from 11 AM to 1 PM—bundle up, come on down to decorate a pumpkin, and check out the other activities! We also have carnitas left from today, so come hungry.

We will be open today despite the rain in the forecast! We are opening at 8:00 AM, and today's special is Carnitas—available in a taco, burrito, or quesadilla.
Please note: If the rain gets heavy and foot traffic slows down around 1:00 PM, we may close a bit early today. We will keep an eye on the weather and see how the afternoon goes. Come on by and grab some food!

Calling all early bird breakfast lovers! We are prepped and ready to open early today at 7:30 AM and will be serving until 2:00 PM.
Stop by and grab a breakfast burrito or a couple of breakfast tacos before heading into work. While you are here, check out our new 15 oz "Taco the Town" mugs and hot/cold tumblers available for sale today at the trailer.

We'll be serving up tacos and quesadillas for dinner tonight. Please note that burritos will not be available this evening.

Good evening, everyone.
If you are looking for Taco The Town for dinner, we will be at Moderation Brewing this Tuesday evening from 4:00 PM to 7:00 PMish for trivia night and Taco Tuesday.
We will have all of our tacos with the option to add cheese and guacamole, as well as quesadillas. Please note that WILL NOT BE SERVING BURRITOS on Tuesday night.
Before heading to Moderation Brewing, we will be on the mall on Tuesday from 8:00 AM to 2:00 PM, then we will head straight over to the brewery.
Hope to see some of you down there!
