Our smoking method is as old as Pit BBQ with no real difference between today and 150 years ago. There was a time when people were not in such a hurry and took time to sit and savor a home cooked meal. Many of us can't do that today because of the rush of our busy lifestyle, but we still long for a simpler
time with friends...at a slower pace. We provide at least a glimpse into bygone days at Charlie's BBQ with a relaxed atmosphere and lots of meat-based calories. We start with whole pork shoulders and smoke them for more than 24 hours before we pull them for your sandwich or plate. The rich smoke flavor is not a flavor that we add; it is the result of the meat slowly interacting with the wood coals in our specially designed custom-built smoke pits. The interior smoke pits are 5 feet wide and 24 feet long and are kept warm around the clock. There is often a smell of fresh Q drifting over Hwy 70 in Bruceton luring unsuspecting motorists into turning on a blinker and joining us for lunch or an early dinner. We have developed special touches in an effort to provide the best product available. Our secret signature hot and mild sauces are savored by the thousands of customers we have served over the last six years. Our special bean recipe may not make you slap your grannie, but you may want to shake her around a little bit; she will understand. By now, he has personally smoked more Q than 99.99% of the population. He was taught the tricks of the trade by a local legend and refined his skills before starting the restaurant by cooking for his extended family in his backyard every weekend.
