A message from Christian and Stacey:
After two weeks of time away from the bakery, we have decided that we will remain closed going into 2026. Running and growing the bakery has been an absolute joy, and we have loved getting to experiment and bring new offerings to you all over the last few months.
Unfortunately, our focus has been divided. We’re only one family, and between Lucille + Mabel burning, taking over the bakery, and running the Brownwood Schlotzsky’s, we’ve realized we’re stretched way too thin.
It’s in that spirit that we have decided to focus all of our attention for the time being on 919 N Fisk. On January 25th, our franchise with Schlotzsky’s will end; we will begin preparing the building to launch a brand new restaurant. The bakery will need some significant renovations in the dining area and kitchen to allow us to launch our wood fired pizzas, whereas the Schlotzsky’s building is already close to what we need and should allow us to launch with gusto sometime this spring.
We’ll be calling our new place ‘Fusion’ and it will feature a unique blend of Mexican and Asian (Mexic-Asian!) cuisine. We’ll specialize in bowls, burritos, even nachos built right in front of you. Our offerings will be full of the flavor and creativity you’ve all come to know and expect from Christian and the Lucille + Mabel name.
Rest assured, the bakery will reopen! We are so excited for the pizzas and pastas we’ve been working on behind the scenes and we can’t wait to share them with you later on. We will keep you updated, so make sure to keep a lookout for news of our progress! While you’re at it, stay tuned for the official launch of our Fusion Facebook and Instagram accounts coming soon with pictures and other updates!
