This one is for all the Chirina’s Fans in the RGV, across the country and Mexico! When we first opened our doors in 2022 someone asked me, “y si no pegas?” And I responded, “Y si si?”

Once every three months, the Chirina’s team comes together to perfect our craft. This quarter, our GM Isaac focused on consistency in every interaction.

Because excellence doesn’t happen by accident. We practice it.

What kind of restaurant has a Vision Statement that doesn’t mention food?

Ours.

Our Vision Statement at Chirina’s: “Be an organization that takes a stand for the betterment of people.”

No mention of fish tacos.
No mention of restaurants.
No mention of becoming the biggest.

That’s intentional.

It was never about the fish tacos. Now, if you’ve tried them, you might argue they’re some of the best fish tacos you’ve ever had. We absolutely obsess over perfecting the art of the taco, but that’s a product of something bigger: our identity in excellence.

Fish tacos are what we sell. They’re also a resource that allows us to employ people, develop leaders, support fundraisers, give back, and serve the communities that have supported us. The heart of Chirina’s has always been about taking a stand for people when the world won’t.

Our Founder is the son of immigrants and for a lot of families along the southern border, there’s a story we understand without having to explain much. Sometimes you’re six years old translating for your parents.

You’re told, “You need to be somebody in life,”but nobody really tells you how.

Our parents worked hard, sacrificed, and gave us opportunities they didn’t have themselves. But who teaches the next generation how to build on that sacrifice? Who teaches you why purchasing a home can be one of the most important investments you’ll make? Who teaches you how to use a credit card wisely instead of destroying your credit the first time somebody is willing to give you some?

What if the company you worked for did? That’s part of the dream for Chirina’s. We want to build a brand that can educate and elevate families! A company that doesn’t just provide jobs, but helps people build careers, start businesses, and create opportunities for their children that didn’t exist before.

That’s why our Vision Statement doesn’t say anything about fish tacos. Fish tacos are the vehicle.

People are the purpose.

We’re in this business to make an IMPACT.

That is the heart of Chirina’s.

Why are we closed on Sundays?

Simple. Our people matter more than one more day of sales.

Our crew members get two days off each week, and Sunday is one of them. It’s the one day we make sure everyone at Chirina’s is off together. A day to worship. Spend time with family. Fire up the pit. Watch some football. Sleep in. Or just do absolutely nothing. 😂

Whatever Sunday looks like for them, it belongs to them.

We believe a good business should take care of the people who take care of it. Giving our entire team Sunday to slow down, recharge, and enjoy life helps bring a little more balance to the people behind Chirina’s.

The tacos can wait until Monday.

Closed Sundays. Open Monday–Saturday.

This piece of paper is older than Chirina’s Fish Tacos.

Before there was a restaurant, there was a dream.

This was the original roadmap for Chirina’s. The vision was never just one location. It was to grow across the Rio Grande Valley, South Texas, and eventually the southern border, with one ultimate destination on the map from the very beginning.

San Diego, California.

The Fish Taco Capital of the World.

Today, that dream is still alive, and every customer who chooses Chirina’s has become part of making it a reality.

So now we’d love to hear from you.

Where should Chirina’s go next?

Harlingen? Weslaco? Somewhere else?

Tell us in the comments.

Our 1st Core Value at Chirina’s is: “La comida sabe mas sabrosa cuando se hace con amor.” “Food taste better when cooked with love.” We remind ourselves how lucky we are to be alive & well, humbled by the opportunity to serve, and grateful to live our purpose everyday. The secret to our unique taste is LOVE!

Hello guys, this is Vicente's mom, Lupita- Chirina's # 1 fan. She had a very traumatic fall in February in Houston, which included a fracture in her neck and severe bleeding in her brain. She is alive by the grace of God after a 1 month stay in Houston. Now she's back in Brownsville Rehab for 3 weeks. Every time she goes out or someone caters to her she ALWAYS asks for Chirinas. While she was in Houston she missed family... and Chirinas. Her family knows tacos are made with lots of love !! These are just two pictures, but there are many more that chronicle her visits.

We thank Daisy for sharing this story about her mother-in-law and for remembering our namesake, Chirina (Rosa Maria Gonzalez) with lots of love. Quote from Daisy: "My mother-in-law is very quiet and reserved, a pero dile Chirinas y le Brillan los ojitos. God bless you guys and your Chirinas legacy."
