With the Grand Opening of Take-Out Alley happening on tomorrow, August 18th, please allow me to introduce myself. My name is Ian Petardi, and I am the owner of Take-Out Alley. This has been a dream of mine since I got involved in the food hospitality industry 16 years ago.
I was born in Albuquerque, NM and moved to Brookville when I was 7. I consider Brookville my hometown. I’m from the BAHS Class of 2008. Go Raiders! When I was a kid and people asked me what I wanted to be when I grew up, I would say “I want to be a Chef.” I was very lucky to have an amazing Grandmother (Jean) and Mother (Jeannie) who got me cooking by helping them prepare meals for family and friends. To this day, I think my mom is the greatest cook in the world. Anyone who has ever experienced her meals would say the same. One ingredient I truly fell in love with as a child is Hatch Green Chile, and it is one of the main components of the food I will be serving.
After graduation, I went to college on an athletic scholarship, but I knew that’s not what I wanted to do with my life. I found my calling a year later, and ended up at Le Cordon Bleu in Pittsburgh where I graduated with honors. I did interviews with some companies to start my culinary life, and only one stood out: Disney World. I packed my bags and moved to Orlando, Florida to start a new adventure. I worked a few years under the “mouse” and that gave me an experience of a lifetime.
After Disney, I ended up working my way up the ladder for the restaurant company Landry’s. I worked at the specialty restaurants T-Rex Café and Rainforest Café. At the age of 25, I got the call to become a kitchen manager for the Rainforest Café which sent me to Fort Lauderdale. After a few years there, I took my experience to Tijuana Flats Burrito company and became a General Manager. This is where I decided that this was the kind of food I wanted to put my heart into.
Once the pandemic hit, the food industry made me rethink my life. I decided to move back to Brookville and help out my Father (Ken) with his outdoor advertising company. After a few years, the dream of Take-Out Alley became possible and now I want to share my experiences and my cooking with my hometown.
Take-Out Alley is a Tex-Mex/Hot Dog (Glizzy) lunch spot that showcases the food that I love to eat and cook: made to order Burritos, Tacos, and Hot Dogs, with lots of variations. Meat lovers and Vegetarians alike will find something to enjoy. And as much as I love green chile, you can order your food without it if it's not your thing.
Take-Out Alley uses fresh, healthy ingredients, and offers great flavors. Our drink products will be craft sodas and teas with natural ingredients. We also use environmentally friendly packing products.
