It’s weirdly hot and what’s better to eat in this wild weather than a chilled soup? 🫜 Chłodnik Litewski aka Chilled Borscht is back this weekend. 🫜 It’s creamy, a little sweet and a little sour and it comes with a perfect jammy egg to make it slightly richer. 🫜 Get it if you love beets, get it if you don’t like beets - it may just turn you into a beet lover!

Do you remember the episode of S*x & the City in which Carrie gets photographed for New York Magazine’s “Single and Fabulous” feature and then, to her horror, discovers that the article is actually “Single and Fabulous?” (Question mark!) and the editors picked a horrible photo of her for the cover? 

Well, we kept thinking about that episode, because for the past 2 weeks we knew we’d be reviewed by New York Magazine and we had no idea if the review would be good or bad. Never in our wildest dreams did we ever think that our humble restaurant far out in Queens would get noticed by food critics, not to mention receiving such an amazing review at THE New York Magazine. We are honored, thankful and proud beyond words! It’s especially meaningful because we really are just two immigrants with no investors, no venture capital, no PR team... 

None of this could have of course happened without our amazing team: thank you to our amazing chef Matt and our entire BOH and FOH team, you’re the best!

Lately, it feels like all the noise-rockers, brand managers, and alt-comedians have ventured from Bushwick to Ridgewood, and not by accident, the wedge of Queens has been developing at the same time as a dining destination. Late last year, the newest comer came: Look for the crocheted curtains freshly hung in an old funeral home at the corner of Onderdonk Avenue.

This is the domain of the Pierogi Boys, a.k.a. Andrzej Kinczyk and Krzysztof Poluchowicz, partners in life and dumplings. The Boys are not new to pierogi, which they have been selling at the DeKalb Market Hall since 2017, and they are not new to Ridgewood, where they have lived since emigrating from Poland 21 years ago. But their 40-seat restaurant with a sizable grocery attached is the largest expression of their ambitions yet.

👋 Hi friends, the weekend is here and so are our new specials! 😎

We couldn’t be more excited for:

🐟 Marinated Herring (Śledź marynowany)​ with the creamiest potato salad, dill sauce​ and linseed oil

🍄‍🟫 Lazy Dumplings (Pierogi Leniwe)​ - we are serving these dumplings (made ​b​y mixing farmer cheese into a dough ​- they used to be a staple of ​the communist-era milk bars in Poland​) with oyster mushrooms, Madeira, sour pickles & sour cream sauce

​For dessert we have brand-new 🍨 Prince Polo Ice Cream with Caramel Swirl (Prince Polo is a classic Polish chocolate-covered​ wafer bar made since 1955​ 🍫) and some of our tested cakes:
🍒 Wuzetka (Warsaw Cake)​ and 🍰🐝 Miodownik (Layered Honey Cake)

For drinks, Kompot 🍎 our traditional Polish non-alcoholic fruit beverage made in house with plums, prunes, apples and rose hip is back along with “Boozy Kompot” 🍹—it’s grown up version made with Żołądkowa Gorzka vodka—fruity, herbal and comforting. And we keep serving “Donut as a Cocktail” 🌹🍸 with Rose petal jam, gin, lime, Campari and edible rose petals.

Some super exciting specials for this weekend!

🥩 steak tartare with some marinated Polish mushrooms and a silky yolk

🍖 beef goulash with pyzy!!! (I know that in other parts of Poland “pyzy” mean something else, but where I’m from, “pyzy” are spongy steamed buns served with saucy meats to soak up all that delicious sauce!)

🍹 Kompot - a fruity non alcoholic drink (that you can get virgin or spiked with żołądkowa gorzka vodka!)

🍰 Miodownik - a layered honey cake

This week we have a very special dessert special for you, Warsaw’s most iconic old school cake - Wuzetka (pronounced voo-zet-kah) Chocolate sponge. Whipped cream and cherries. Shiny chocolate glaze.

It’s decadent, rich and - as we Poles like our desserts - “not too sweet.”

Wuzetka showed up in the late 1940s, in post-war Warsaw cafés when people needed comfort, elegance, and a good excuse to sit down with a coffee. It’s a quintessential Varsovian dish, but it quickly became very popular all over Poland.

It’s most likely (nobody knows for sure) named after the W-Z Route — the east-west artery of rebuilt Warsaw (think of it a bit like Warsaw’s BQE). A cake born alongside a city putting itself back together. Infrastructure, but make it dessert.

It was immortalized in the cult following classic Polish movie “Miś” (1981) in a famous cafe scene with this classic exchange:

Waitress: Two coffees and two wuzetkas... Anything else?!
Ola: Why “two coffees and two wuzetkas cakes”?
Waitress: Coffee and wuzetka are mandatory for everyone! We’re competing for the “Golden Frying Pan” award.

As immigrants and new Americans we are especially horrified and angry about the current situation and the actions taken by the government.

We wholeheartedly support the protest taking place tomorrow and this weekend! Immigrants are the backbone of this nation and our industry.

We are a small business and many of our employees are immigrants who depend on their income. We have a responsibility to them so closing on a Friday night is simply not an option.

We will be open and we’ll donate a portion of our profit to organizations directly supporting immigrants.

It’s hard to imagine anything more traditionally Polish than our dinner special this week. 🫜 Little dumplings called „Uszka,” literally „little ears” (because of their shape), are made with forest mushrooms and served with clear borscht made with homemade beet kvas and with plenty of black pepper. 🎄 Traditionally vegan, because in Poland Christmas Eve dinner is always meatless. That’s „Wigilijny Barszcz z Uszkami” or Christmas Eve Borscht with Mini Mushroom Pierogi. 🥟 Making this dish takes about a week, but it’s time well spent because the flavor is truly one of a kind and for every Polish person it is an essential flavor of Christmas. Enjoy! 🎁

Since Conde Nast Traveler just named our Biała Kielbasa with Ciapkapusta and Onion Gravy one of the Best Bites of November, (thank you ❤️ and ) we want to tell you a little more about what makes Biała Kielbasa so special! ✨

Unlike traditional Polish sausage, Biała Kielbasa (white sausage) bought from a butcher is raw and unsmoked! 👻

When we were kids, 🇵🇱 our parents would simply boil it in water and eat it with horseradish or mustard and pickled cucumbers. 😱 We spend a lot more time on our version of this dish because it’s best when baked for a long time in beer and with an obscene amount of onion. 🧅 🍺 🔥 And we serve it with traditional Polish Ciapkapusta—mashed potatoes with sauerkraut! So so so good!!!
