Our Journey So Far
Bringing northern Chinese food to the melting pot of culinary experiences in Bay Ridge has been very profound. Northern Chinese food is simple, down to earth, to the point, more like playing with primary colors. A chef composes great dishes using limited ingredients. Once in a while you hit great richness out of simple ingredients. It then becomes a life-long yearning for simplicity. These encounters compel us to open a dumplings place to chase that great simplicity as a counterpoint to the oily nature of other Chinese food.
With limited financial resources, we started with something between a fast food and a sit- down dining place. It has been a great learning curve for us. We intended to offer maximum variety under the constraints of limited dining space and kitchen. But then we might have accidentally stepped into a difficult combination of speed and variety. These first 3 weeks tells us that we probably will survive the first challenges that normally come with a new restaurant operated by enthusiastic food lovers.
Our hearts were so pleased when some customers may have found that something we so love to offer and our hearts sank when some customers were served with wrong orders at the end of a long long wait. We deeply apologize for incidents like the latter. I wonder if those who were offended will come back giving us a second chance to serve. Once we stand on a solid ground, we like to venture out with new tastes and new dishes. We appreciate all the attention you paid to us and are anxious to share with you our culinary adventures.
