2025 Michelin Bib Gourmand ❤️

The hands behind the masa, the kitchen, and the dining room floor.

This recognition belongs entirely to our team – from the early morning nixtamal runs at the factory to the late nights at the restaurant pass. We are incredibly proud to share that Sobre Masa has retained its Michelin Bib Gourmand for 2025, marking our fourth year in a row.

Thank you to our crew for keeping the dream moving forward daily, and to New York for embracing our mission and heritage corn.

Mole amarillo, maitake mushroom, hoja santa oil.

Mole amarillo — or amarillito — is a traditional Oaxacan guisado. Often prepared with chicken, pork, or mushrooms, it’s used for empanadas bright with cilantro and lime, and for tamales wrapped in hoja de milpa in Teotitlán del Valle.

Ours is a vegan expression of that classic, layered over freshly made masa by our team.
