Leading From The Front

Wednesday nights have their own rhythm.

The tickets start stacking.
The oven runs hot.
The kitchen finds its pace.

On a night like this, the easy thing is to stay out front. Work the room. Shake a few hands.

John does plenty of that.

But when it gets loud in the back, he doesn't point from the doorway.

He steps in.

Beside Francisco on the line.
Beside Rosa, keeping the kitchen moving.
Hands in it, same as everyone else.

That's the thing about this place. Nobody is above the work. The name on the door belongs to the same person who is back here when it counts.

That's not a phrase we use lightly around here.

It starts with semolina and water.
John knows when the mix is right.
Not from a recipe.

From there, it goes into the extruder.

IL CAPO Uncovered | Episode 19 The Anniversary Pasta

It started with a question.

A couple who has been with us since the beginning came in to celebrate their anniversary. Marie asked John if he could make them something special.

He said yes.

He went back to the kitchen and made what his mother Linda taught him. Grape tomatoes. Garlic. Olive oil. A little fresh arugula. Cooked down slow. Tossed with fresh pasta made right here.

That night, it was fettuccine.

This Wednesday, May 20, it became something more. Fresh pasta officially joined the IL CAPO menu. And the first dish we named?

The Anniversary Pasta.

What you're watching in this episode is John and Francisco making the first official orders. The real ones. The ones that go out to real tables, from a kitchen that has been building toward this moment for a long time.

A couple came in for their anniversary dinner.

Marie asked John if he could make them something special.
Fresh pasta. Simple sauce. Something that felt like home.

John said yes.

He went to the kitchen and made what his mother Linda taught him.
Grape tomatoes. Garlic. Olive oil. A little fresh arugula.

Fresh Pasta at IL CAPO

Some things don't happen overnight.

Fresh pasta has been a conversation at IL CAPO since before we opened. A vision John carried into this kitchen knowing the timing had to be right. Knowing it couldn't be rushed. Knowing that when it happened, it had to mean something.

This week, it meant something.

You're looking at Linda D'Alessandro's hands. John's mom. The same hands that have been shaping dough, crafting recipes, and feeding family for longer than IL CAPO has existed. She didn't just help us make pasta. She helped us make it right.

And because nothing at IL CAPO happens in a vacuum, our first official fresh pasta dish has a name.

The Anniversary Pasta.

Named in honor of the couple from our last episode. The ones who came in to celebrate their anniversary and inspired this whole moment. That's how we do things here. People walk through our door and leave their mark on us. Sometimes literally, on the menu.

Fresh pasta officially joins the IL CAPO menu this Wednesday, May 20.

This is a milestone. For John. For this kitchen. For everyone who has been showing up, ordering in, pulling up a chair, and trusting us to keep getting better.

The housemade vodka sauce and roasted pepperoni cups take it anyway.

The Classic Parmesan is exactly what it sounds like.
Chicken, eggplant, or meatball. Housemade marinara. Mozzarella melted into a seeded roll.
