Understory Farm flowers filled the barn yesterday evening for a flower arranging workshop led by Kelsey of Kelsey | Vermont Grown Sustainable Florist. Midsummer always seems to arrive like a flash, thus gathering with a group of fellow flower-admirers to celebrate the bounty of all these blooms (just tiny seeds not long ago…and grown only 20 miles southwest of here) felt like hitting pause on one of the most special times of the year.

The beauty of these workshops is not only learning about the art of arranging and growing cut flowers…but it’s also about slowing down with the natural world around us- creating this snapshot of time in the form of a magnificent handful of flowers before you. Kelsey and Gregory will be back in the fall and winter for two more workshops in this 4-part series that began in early spring. Hope to see you there!

Early summer at The Tillerman on film 🎞️. Each week weaves through quiet stays at the inn: meandering down the path to the creek lined with giant, prehistoric-looking fuki leaves…to bustling Wednesday night music, when the property is quite literally singing with joy…and, of course, nights the restaurant is open, where our ever-changing menu celebrates Vermont farmers and food makers. Then each weekend, anywhere from 30–175 people gather here to celebrate weddings- there’s something really special about watching a place become the backdrop to so many people choosing to gather, celebrate, and begin a new chapter together. And then we do it all over again the next week!

A special thank you to everyone who has joined us over the last few months, our incredible team who keeps the wheels (beautifully!) greased and turning, all the bands that have come through and let us kick back, dance, and relax to your songs, and this mosaic property that comes alive in all its layered lushness- for us to get lost in, and be in continual awe of. A place we come together to appreciate good food, find joy in the simple things, better know our neighbors, and celebrate all the beauty Vermont has to offer. 💚

See you soon!

Each year, BARR HILL GIN hosts Bee’s Knees Week- a celebration of the pollinators that make their Vermont-made gin possible. Since 2017, participants have helped fund over one million sq.ft. of pollinator habitat nationwide and counting! For each post shared on social media, they plant 1 square foot of pollinator habitat.

Our cocktail offering this year is called The Pollinator Garden, with honey lilac syrup made in house. Lilac season is fleeting- so we wanted to find a way to let the sweet scent linger here a little longer. All spring, we’ve been admiring the countless bees, tiger swallowtail butterflies, and hummingbirds circling the gardens- what would we do without them?!

This recipe is from our front of house manager and cocktail witch, Marlaina. Lilac blossoms thanks to our pizza and pastry assistant, Sam. Enjoy!

THE POLLINATOR GARDEN
- 3/4 oz. lemon juice
-3/4 oz. honey lilac syrup (recipe link in bio)
-2oz barr hill gin
-1 drop of rose water

Shake with ice, strain, and pour into a coupe glass. Garnish with lemon peel or edible flowers. Best enjoyed sitting in a garden admiring the passerby pollinators.
